Peking chicken salad puts a twist on a Chinese takeout favorite

Dig into a classic Chinese-inspired dish like this gluten-free Peking chicken salad!

If you think you can get only certain meals from your favorite Chinese restaurant, I’m here to tell you to think again — at least with this dish that includes a variation of traditional Peking sauce.

A delicious and gluten-free dish like Peking chicken salad is perfect for lunch or dinner.

Peking duck is a popular dish in many Chinese restaurants, but for this recipe I added Peking sauce to chicken, then broiled the chicken and tossed it up with a green salad with extra sauce on the side. It couldn’t be easier to make for a hearty meal, and the flavors are fantastic.

Peking chicken salad recipe

This filling salad is a flavorful offering for lunch or dinner. Make extra and take it as lunch, or serve it for leftovers the following day — no takeout required!

Serves 4-6

Prep time: 10 minutes | Cook time: 15 minutes | Inactive time: 10 minutes | Total time: 35 minutes

Ingredients:

For the basting sauce

  • 5 tablespoons plum sauce
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons cider vinegar
  • 2 garlic cloves, minced
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon chili powder

For the extra sauce for the salad

  • 3 tablespoons plum sauce
  • 3 tablespoons water
  • 2 tablespoons soy sauce
  • 1 tablespoon cider vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon ground black pepper

For the salad

  • 2 pounds boneless, skinless chicken breasts, pounded to an even thickness
  • 4-6 cups salad greens
  • 2 small cucumbers, ends trimmed, cut into rounds and quartered
  • 1 cup matchstick-cut carrots
  • 3 green onions, ends trimmed and cut into small pieces
  • Toasted sesame seeds, for garnish

Directions:

For the basting sauce

  1. To a small bowl, add all the ingredients, and whisk to combine. Taste, and adjust the seasoning as needed.

For the extra sauce for the salad

  1. To a small saucepan, add all the ingredients. Taste, and adjust the seasoning as needed. Bring to a boil, and cook for about a minute or so. Remove from the heat, and allow the mixture to come to room temperature.

For the salad

  1. The basting mixture will be used in thirds. Brush the first 1/3 over both sides of the chicken breasts. Place the breasts on a broiling pan that has a tray to collect drippings.
  2. Place under the broiler (about 3 inches from the heat) for 3 to 4 minutes. Remove, and flip the chicken over. Brush with 1/3 of the basting mixture. Cook for 5 minutes.
  3. Remove the chicken from the oven, brush with the remaining mixture, and bake under the broiler for another 5 minutes. The sauce should be slightly caramelized and look a bit sticky on the top of the chicken.
  4. Remove from the oven, and allow the chicken to rest for about 10 minutes. Slice the chicken into 2- to 3-inch pieces.
  5. Assemble the salad in individual bowls with the greens, cucumbers, carrots, green onions, chicken and a sprinkling of sesame seeds.
  6. Drizzle the extra sauce over the salad.
  7. Serve immediately.

The reality star told Entertainment Tonight she will be leaving the hit show to focus on her family and her business, Yummie by Heather Thomson. Why? Like many women, Thomson just decided there aren’t enough hours in the day to do it all.

"The reality of it is that I just can't do it anymore," she told ET on Tuesday. "I have to focus on the things that are really, really important in my life and that's my family and my business. While I'm filming the show I also am running a multimillion-dollar business, and it takes away a lot of my time from the company."

Thomson said she feels like her three seasons had a natural progression that came to an end.

"My third year I kind of figured out where I was with the women," she explained. "There was a beginning, middle and end for everything, and for me, that was the end.

"The opportunity, the experience — it was all amazing while it lasted," she added. "But, again... the third time was the charm for me.

"They don't match you with normal people you'd gravitate toward — that's the genius of the casting," she said. "They put you in a situation of people you wouldn't normally be with... that is interesting to see you react and interact with someone you wouldn't normally hang out with... Ramona [Singer] is not someone that I think if we met socially, either of us would gravitate towards one another... we overcame our differences."

But her decision doesn’t mean we’ll never see her on the small screen again. The star said she is leaving the "door open" with Bravo.

The Game of Thrones actress spent her first video answering fan questions, including some amazing tidbits about the show and her personal life.

Warning: There are some Game of Thrones spoilers from last season in there, so watch and read at your own discretion if you aren't caught up.

1. Game of Thrones makes her cry, too

Williams said that she thought the part when Ygritte died saying "You know nothing, Jon Snow" made her cry the most. And her impression is actually spot-on.

2. She makes embarrassing mistakes like a normal human

Williams said she recently met with a casting director for coffee and "[she] left without even offering to pay."

"That's so bad!" fellow Game of Thrones star and Williams' BFF Sophie Turner says from off-camera.

"I'm so embarrassed!" Williams said of the spacey moment.

3. Sophie Turner makes a fun little cameo

Not only do you hear Turner's voice, you also get to glimpse her adorable face. She pops in to describe her personal scent as "heavenly," after a fan asks Williams to describe what Turner smells like.

4. Caspar Lee inspired her channel

"I get along well with Caspar," Williams said of the YouTube star. "He is the main reason why I decided to make a YouTube channel. So thank you for that and thank you for showing me the ropes."

5. She has a boyfriend

"Yes, I do," Williams confirmed when she was asked if she had a boyfriend. "And that's all we'll say about that."

After a long pause, she adds, "Sorry."

8. She loves Shark Week

Williams said her favorite place to watch TV is at her mom's home with her siblings, especially when it's Shark Week. "Then I love watching TV," Williams explains.

9. She has a hilarious nickname

"When I was little everyone used to call me Green Giant because I'm 5'1"," Williams said, clearly unimpressed with the name as she rolls her eyes and adds, "Stupid."

10. She has discovered the perfect pebble

"I was on a pebbly beach in the U.K. and I was walking with my mom, I was about 3 or 4. And I found a pebble that was the perfect pebble. I don't know what criteria goes into making the perfect pebble, but it was in my opinion."

But at the end of their long walk, after carrying the pebble the entire way, she accidentally dropped it.

"My little lip was going," Williams explained, but it was Mom to the rescue. She "grabbed a pebble off the floor and was like, 'Look, I found it!' And to this day I know that it wasn't the same pebble but I respect her for trying. And, ya, thank you, Mom."

11. Her biggest pet peeve is totally understandable

Williams said she hates "people who ask for your advice and then ignore you."

The actress then launches into a series of fun and random either-or questions.

12. Dancing or singing?

Amid stories that Ben Affleck's nanny was a bone of contention between the couple and Brady's reputation being torn to shreds over Deflategate, Gisele was said to be ready to walk out on the football star — but he says that simply is not true.

"We're in a great place. I'll just say that," Brady said during an interview with radio station WEEI.

"I'm a lucky man. I've been very blessed with support from my family and certainly her. There's no bigger supporter that I have than her and vice versa. I've been very blessed to have an incredible relationship with my life partner. I don't think anything would ever get in the way of that."

Gisele did her part to dispel the rumors in her own way, by posting this image with a super-mushy caption to Instagram.

My secretary leapt from her desk and scurried to intercept me before I entered my office.

"Where have you been?" she whispered anxiously, studying my face. "And why do you look so... sweaty?"

I swiped my forehead. "I was just at lunch. It's hot outside." It was a lie, but Rita already looked flustered enough for both of us.

"Mackenzie," she hissed, her eyes darting around the hallway to ensure she wasn't being watched. "Saul's called three times. And he sounded really pissed-awf. I mean, REALLY pissed awwwf," she emphasized in her thick Long Island accent. "He wants you in conference room 27C — ASAP. He asked for your personnel file." Her kind eyes filled with concern.

My stomach dropped. If my gut hadn't already warned me this meeting would be bad news, the request for my personnel file solidified it.

"He wouldn't tell me what the meeting was about, but I don't think it's good, Mac." She wrung her hands. "If they're lettin' you go, I don't want you goin' down without a fight, so I printed out a spreadsheet of your billable hours to take with ya to the meeting." Rita dashed back to her desk, knocking over the Starbucks cup perched precariously on the counter of her cubicle, sending pools of coffee over a pile of papers.

"Oh, crap! Crap! Crap! Crap!" She frantically wiped the coffee with a balled-up napkin. "Good enough." She pushed the coffee-stained document into my hands. "Let them see what you've given this firm." Her eyes burrowed into mine, the way a trainer stares into the eyes of a boxer during a pre-fight pep talk.

"Thanks," I mumbled, heading into my office to grab a legal pad. I squinted at the clock on my computer, silently willing time to stop so I could catch my breath.

"Is there anything else I can do?" Rita peered into my office, tugging nervously at her short leather skirt.

"No, that's fine, Rita." My tone was clipped as I breezed past her on my way to the elevator.

Get it together, Mackenzie, I repeated, punching the button for the twenty-seventh floor. Don't panic.

Yesterday I'd been practicing my best surprised face so I would be prepared when they inevitably knighted me with an honor bestowed on only a select few associates. Things couldn't have changed drastically in the past twenty-four hours. Unless...

A tight band of stress constricted around my lungs. Unless they'd found out about my one teeny, tiny transgression.

When the elevator doors opened, the large group standing there startled me. Sixty eager-to-please law students dressed in shiny new suits and smelling like the leather from their recently gifted briefcases were reporting for their first day as summer associates. I remembered my first day at Freedman & Downs ("F&D" as they had branded themselves) when I too had that same confident glint in my eye. How could I not? We were the chosen ones — the Type A personalities who'd graduated top of our class from the most prestigious law schools and now had the good fortune of nabbing a coveted summer associate position. The standards had been stringent. F&D was part of an elite group of New York mega-firms, the ones that housed 500+ lawyers, with offices that were run like small cities. Lawyers referred to this collection of firms simply as "Biglaw," and landing at one of them meant earning close to $200,000 right out of law school. Thousands applied to F&D, only sixty were chosen. It was a dream job.

Is this how I used to look? I wondered, studying their fresh faces with annoyance and fascination. No glassy eyes from long, obedient hours staring at a computer screen. No physical signs of prolonged sleep deprivation. A few of them even had a summer tan. A tan is practically forbidden in Biglaw. It shows you're spending too much time outside the office. Maybe even have a hobby. They had no idea what was in store for them, just as I hadn't. Like war, Biglaw is something that has to be experienced firsthand to truly be understood.

I pushed through the crowd and down the hall as another associate scurried past me. Nobody walked at F&D. They scurried. Walking was for people with time on their hands. I recognized him — he was the associate with the peculiar habit of carrying around a briefcase with a huge block of cheese inside and nothing else. Cheese Boy might stand out as strange outside of Biglaw, but at F&D he fit right in. In Biglaw, some form of eccentricity is practically a job requirement.

"Mackenzie!" A familiar shrill voice spat out my name venomously from the end of corridor.

Cheese Boy whipped around to locate the target of Sarah's wrath. A mix of sympathy and fear filled his eyes as they met mine for a second. He quickened his pace. Clearly he didn't want to be in the middle of what was about to go down.

"Get your ass in here," Sarah hissed, gesturing towards the door. Her neck was covered in red blotches and her stick straight hair looked so frizzy you'd think she'd just run a marathon. I'd never seen her look so unnerved. "Everyone is waiting!" She disappeared back inside the conference room.

I could feel my underarms growing wet. Taking a long breath, I stepped into the conference room, prepared to hear my fate.

But there had been no need to practice my surprised face, because my face contorted into a genuine expression of shock quite naturally when I saw the man in front of me extending his hand.

"Miss Corbett, I'm Tucker Sullivan with the Securities and Exchange Enforcement division. I have a few questions for you regarding some unusual trading activity we've uncovered. Why don't we all take a seat?" He strode briskly behind me and pushed the conference room door shut.

NCIS’ Pauley Perrette reportedly dealing with more drama from her ex-husband

According to Radar Online, Perrette’s former spouse, Francis Shivers, was just locked up for violating a restraining order she had against him.

The tabloid site confirmed with LAX Airport Courthouse that Shivers surrendered to the department Tuesday morning. This is just the latest in the long struggle between the two, which usually results in Shivers being arrested for his bad behavior.

The pair married in 2000 and Perrette divorced Shivers in 2006. The divorce was more than messy and Perrette was granted a restraining order against him.

In 2010, Shivers was convicted but served no time in jail for sending the NCIS star threatening emails.

Then, in 2013, he once again sent threatening emails to Perrette, in violation of the previously mentioned restraining order, which barred him from even electronic contact. He received 90 days in jail on this occasion. Because of his first conviction, he was on probation, which now means that the DJ will receive an additional 180 days in jail for violation of his probation.

Thanks to jail overcrowding in the great state of California, Shivers will most likely be in jail no more than 36 days, if even a week. According to Radar Online, Shivers claims to have done nothing wrong and the story is said to still be developing.

We shall have to wait and see how long he is made to stay in jail for his offenses.

7 Things to know about Chelsy Davy, the could-be next princess

1. She's not British

Or, at least, she didn't grow up there. She was born and raised in Zimbabwe on a huge estate to very wealthy parents and attended college in Cape Town, South Africa, although she did go to boarding school in the U.K.

2. She's a lawyer

Davy began her law career as a trainee solicitor at the law firm Allen & Overy in London in 2011, but left in 2014 to pursue other interests after some said she found the work "balls-achingly boring."

3. She's been Harry's girl for ages

Davy met Harry in 2004 when she was at British boarding school and they've been on-again, off-again ever since. She attended Prince William's wedding to the former Kate Middleton at Harry's side, but they broke up again shortly thereafter. He was soon linked to Cressida Bonas, but that fell apart, too.

4. She's not crazy about the idea of becoming royalty

One bone of contention in her relationship with Harry is what she will have to give up if the two wed — namely, a huge chunk of her privacy and her right to her own interests. She already has plenty of money and she enjoys something that the Duchess of Cambridge never will again: relative anonymity and the ability to go where she wants when she wants and do exactly and only what she wants. That would be impossible if she were to devote her life to royal service — a must if she were to marry Harry.

5. She's from a very wealthy family

You may see Davy's father described humbly as a safari farmer — and that may be technically correct — but Charles Davy is one of the largest private landowners in Zimbabwe and owned a huge big game hunting business.

6. Her family business runs counter to Will and Harry's pet project

Charles Davy earned the bulk of his fortune from his holdings in a big game hunting business, only selling his interest when he was placed under investigation for illegal currency dealing. However, Prince William and Prince Harry have both thrown their time and energy behind conservation in Africa, including curbing big game hunting. Harry spent the summer in Namibia, South Africa, Tanzania and Botswana working to protect rhinos and elephants from poachers. Along with Will and Kate, he started the United For Wildlife organization, whose mission is to curb the illegal wildlife trade. Might make for awkward family barbecues.

7. She loves Facebook

Davy's Facebook page is semi-public — you can see more than a few photos of her with friends and family, but none of Harry — and the press caught wind of the couple's 2009 breakup when she changed her relationship status to "single." That type of information is now hidden, but the glimpse into her life the photos give us sure is glam!

Bonus fact: She won't actually be a princess

If Davy and the prince do actually wed, she won't receive the title of princess. Like Kate Middleton, she would most likely be named a duchess, or possibly a countess. But in our book, if you're married to a prince, you can call yourself whatever you want!

9 The Muppets spoilers that make it different than any other Muppets show or film

The Muppets will be a half-hour comedy that debuts on Tuesday, Sept. 22 and has ditched its straightforward variety show format to take on a more modern feel. Here's what to expect.

1. Up Late with Miss Piggy

Our beloved porcine pal has reinvented herself as a late-night talk show host — and we think it's a great move. The talk show will serve as the "play within the play" as we'll also get to see what's going on behind the scenes.

2. It's a mockumentary

Borrowing from the confessional style of Modern Family and The Office, we'll get to see the intimate thoughts of various characters with lots of fun quick-zoom reaction shots.

3. The Swedish Chef is doing craft services

The mumbling Swede will make sure healthy snacks like fruit and string cheese, along with K-cups of coffee, are all set out for the cast and crew.

5. Conflict with the network

American icon Sam Eagle works as the head of standards for ABC and will, no doubt, have stringent rules for the talk show regarding language and content.

Remember Ed McMahon? We didn't think so. He was the sidekick for Johnny Carson when he hosted The Tonight Show. Having a sidekick has sort of gone out of vogue, but we think Fozzie will be the perfect comedic foil to take some of the pressure off Miss Piggy.

The essential beauty tip women should take from a man's routine

I started working from home about a year after I graduated college once I racked up enough remote freelancing gigs that allowed me to write full time. The thought of going to my 9-5 in sweats with a stocked fridge at my disposal was definitely attractive after taking the early train to New York for the past three years. That said, it didn’t take long to miss dolling up for the day. As time went on, though, I still missed the fancy clothes but I did not miss caking on the cosmetics.

Sitting in front of a desktop does not require a full face of cosmetic enhancement, but I felt completely naked without product. I admit to dabbing on a touch of foundation before logging on to chat with my editors. After all, it's instilled in us that this is what working women do.

But after a month of scribbling in notebooks at my dining room table and submitting articles in the comfort of my pajama pants and T-shirts, I had an epiphany. How ridiculous was it that I felt I had an obligation to adhere to society's beauty standards from own home?

These days, my beauty routine resembles a man’s morning touch up because men have one thing right when it comes to their "beauty" routines and that is simplicity.

Now my morning routine consists of a quick shower using either the WEN Fall Ginger Pumpkin Cleansing Conditioner or TRESemme Shampoo. Monday through Friday I skip the blowout and straightening session and opt for a good brush through, allowing my hair to air dry and style as it pleases (quite a flattering wave that I've learned to love). If I know someone will visit, I apply the Almay Truly Lasting Color Foundation and cover up any unwanted blemishes using the Almay Clear Complexion Concealer. Most days, however, I skip makeup altogether.

It strictly has become a weeknight outing or weekend luxury for myself, and honestly, my skin has never felt better. Breakouts are (mostly) a thing of the past and not layering on product after product has improved my confidence because I have learned to love my face for all its natural beauty.

Do not misunderstand me. I still adore glamming up for a night with my guy or grabbing dinner with friends, but when it comes down to it, I figured out firsthand that women do not need makeup to feel beautiful. This is an illusion we've come to believe due to our obsession with celebrities and the all too persuasive media. It’s time more of us gave our bare faces the chance to shine, so next time you're not feeling the cosmetic craze, skip it. There's more to beauty than product.

There were fans who quickly supported Gomez by pointing out to haters that the human body is not something to be ashamed of and that the photo is actually quite tasteful; however, others were not so kind.

Hateful comments ranged from the ever-so-original "slut" and "close your legs" to "ew" and rude musings about Gomez's physical appearance.

We understand that nudity is not for everyone, but the criticisms about Gomez's artful pose are nothing less than slut-shaming, which is especially sad considering Revival is meant to be the official start of a new era in the performer's life.

But Gomez, who recently caught quite a bit of flak for opening up about ditching her purity ring, is no amateur when it comes to dealing with bullying. She's been the victim of public fat-shaming as well and has responded to online hate with confidence that is inspiring.

This also isn't the first time Gomez fans have been up in arms over images of her. She infuriated many and drew Lolita comparisons for a V magazine cover back at the beginning of 2015.

Gordon, who is facing a wrongful death complaint filed by Brown's court-appointed conservator, denied all allegations against him via his attorney on Tuesday, according to People magazine.

The complaint says that Gordon manipulated and controlled Brown, as well as "perpetrated the fraud that he had married Bobbi Kristina," in order to "benefit from her wealth."

Gordon's camp, however, says all of the claims are "slanderous and meritless" and filed a response that says he never physically abused Brown or gave her a "toxic cocktail" on Jan. 31, the night she was found face-down in a bathtub. Gordon did admit in the documents that "he went out on the night in question, that he reviewed video footage and then had an arguement with Ms. Brown and he then changed clothes."

Gordon has remained adamant that he did not have anything to do with the tragic circumstances involving Brown; however, social media commenters don't seem to believe a word of what he's saying.

"When does a guilty person ever admit the truth? Never," said Donna, a People magazine commenter. "If he can cause someone's death, then he certainly isn't afraid to lie. Give him a lie-detector test... mind you it can't be used in court, but it could bring out the truth, couldn't it?"

Brown died July 26, six months after the injuries she sustained on the night of Jan. 31.

Social media commenters aren't the only ones who think that Gordon was involved in Brown's death. Relations between him and the Houston-Brown family have been strained, to put it lightly, as the circumstances surrounding Brown's death continue to be investigated. Gordon was barred from Brown's funeral despite desperate emails sent to Bobby Brown and Pat Houston begging them to let him attend the service for his longtime girlfriend.

His talents were bright in several previous challenges (except his silly gatekeeper makeup) that he proved to be a true contender. Yes, his gender swap makeup was definitely atrocious, but I believe his previous work would have been enough to keep him alive at least one challenge longer. It's a big bummer Ricky is gone.

If we take her inaugural blog post at face value, it’s rather endearing. There's an emphasis on healthy eating, learning about nutrition and body-positivity.

“The human body is utterly amazing, and I’m so proud of all I have done and achieved with mine – the best thing was having my incredible babies. So I want to take care of my body the best way I know how – by making smart choices,” she writes.

Her goals are to learn about the best way to nourish her family and herself (and ok, she wants to shed those pesky last ten pounds).

We are told that the majority of diets fail. Yet, we are also told that excess weight—left unchecked—may lead to a whole host of health ailments.

Hahahaha...sob.

So, where does that leave us, the consumer? Stuck between a rock and a scrumptious burrito, I guess.

Here’s the thing: I don’t think that means we should stop striving for a healthy life; feeding our body with things that are good for it, being active and mindful.

And Alyssa Milano may be just the right person to lead us there, with her charm and likeability.

Milano is no stranger to fat-shaming and it makes me hopeful that as an Atkins Ambassador she’ll be mindful of her responsibility to those looking to make healthier lifestyle choices. Responding to some pretty horrible comments about her weight made by Jay Mohr, Milano back in 2013, Milano tweeted:

A great analogy, explained by Ragan Chastain of the blog, Dances with Fat goes like this: “Almost everyone who attempts weight loss fails. Yet doctors keep prescribing the same things and blaming the vast majority of people for “not trying hard” enough or “not doing it right”. Can you imagine if Viagra only worked 5% of the time and we blamed 95% of the guys for just not trying hard enough? It’s completely ridiculous.”

So, maybe we need to reframe what it is we think weight loss will achieve. In fact, plenty of studies show that attempting weight loss to get healthier may not even be possible.

Yet, the reality is that celebrities will continue to be there, endorsing those companies shilling weight loss. My hope is that Milano will inspire people to get more involved in their health, to be proud of its achievements and strive for ways to keep it healthy and active.

Science confirms there's only one 'real' hangover cure

But, thanks to science, we can no longer indulge in this fantasy. It turns out that the only way to avoid a hangover is to drink less alcohol. A group of international researchers from the Netherlands and Canada looked at the drinking habits of 789 Canadian university students to see what could be understood about the “morning after” in a recent study.

"From what we know from the surveys so far, the only practical way to avoid a hangover is to drink less alcohol" says the lead author of the study, Joris Verster at the ECNP conference. "Those who took food or water showed a slight statistical improvement in how they felt over those who didn't, but this didn't really translate into a meaningful difference,"

The students were questioned about their drinking habits and the subsequent severity of their hangovers. Evidence for this came by way of calculating the estimated blood alcohol concentration in the students who reported experiencing hangovers, as opposed to those who didn't.

Four-fifths of those who claimed not to experience hangovers had an estimated blood alcohol level of less than 0.10 per cent while partying — just slightly over the legal limit of 0.08 per cent for fully licensed drivers in Canada.

"The majority of those who in fact reported never having a hangover tended to drink less, perhaps less than they themselves thought would lead to a hangover" said Verster.

According to Verster, these are early questionnaire-based studies, and are one of the first of their kind. “This means they have limitations, but they do give us an indication of what happens. Our next step is to move forward with more controlled trials”.

Drinking in excess comes with a plethora of potential damaging consequences, and a hangover is kind of our body’s warning system to slow down (or stop) consuming alcohol. Without that horrible “morning-after” feeling, people may be more likely to continue drinking, so good research into the outcomes of drinking to excess is needed, says the study.

Disneyland/Disney World

Beginning in mid-September and ending in mid-November, the Disney parks tend to see lower numbers in attendance thanks to the kids going back to school. With fewer tourists, you'll have more time for rides, less wait time and a higher chance to score deals.

A hot family destination in the spring and summer months, in Yellowstone National Park, September begins a lull in park attendance that lasts until February. Like Chicago, Boston becomes a hot attraction in the fall, providing moderately cool temperatures. Summer crowds have left the area, while the intense Harvard students have moved in. Outside of the always busy Harvard Square is the annual Film Festival and the Red Sox in full swing at Fenway Park.

Although part of the ambiance is the crowd, you're still guaranteed to have tourists around, just not as many as in previous months.

Known as a ski town, Telluride provides gorgeous fall colors and foliage for those seeking a little R & R in September. Greek yogurt-marinated chicken is as tender as it is delicious

In this recipe, I marinated chicken in Greek yogurt along with fresh lemon juice and honey for a dish that comes out super juicy and very tender every time. Don't forget all the flavorful herbs and spices on top.

I like to serve this Mediterranean-inspired chicken dish with vegetable side dishes like steamed green beans or mashed cauliflower. A big green salad would also make a great addition to this healthy, low-carb dinner.

Baked Greek yogurt chicken recipe

Tender and juicy yogurt-marinated chicken is seasoned with lots of Mediterranean herbs and served with vegetables for an easy meal.

Serves 4

Prep time: 15 minutes | Inactive time: 1 hour | Bake time: 25 minutes | Total time: 1 hour 40 minutes

Ingredients:

  • 2 tablespoons olive oil
  • 1/2 cup plain Greek yogurt
  • 1 large lemon, juiced
  • 1 tablespoon honey
  • 4 garlic cloves, minced
  • 4 chicken breasts, cut into strips
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon dried basil
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste

Directions:

  1. In a bowl, combine the olive oil, yogurt, lemon juice, honey and minced garlic.
  2. Mix well, and transfer to a plastic zip-top bag. Add the chicken breast strips, and toss to evenly coat the chicken.
  3. Place the chicken in the refrigerator, and marinate for 1 hour. Meanwhile, in a small bowl, combine all the seasonings, and mix well, then set aside.
  4. Heat the oven to 375 degrees F, and spray a baking dish with nonstick cooking spray.
  5. Place the chicken in the baking dish, and generously sprinkle the tops with the seasoning mix. Bake uncovered for about 25 minutes or until the chicken is tender and the juices run clear.
  6. Serve the chicken warm alongside any vegetable side dishes, such as steamed green beans and mashed cauliflower (as pictured).

Hatred for Amal Clooney surfaces as she risks her life in the Maldives

The human rights attorney is in the Maldives to meet with former president Mohamed Nasheed, who is currently imprisoned on what many are calling trumped-up charges of terrorism. But the political situation is extremely unstable and Clooney's co-counsel, Mahfooz Saeed, was stabbed in the head outside of his hotel on Sept. 4. He remains in a critical condition.

"Maldives authorities must ensure that human rights defenders can work free from fear of reprisals," Amnesty International admonished in a statement. "Political tensions in Maldives are running high, and there is a climate of fear spreading among opposition supporters and human rights defenders, as the human rights situation has deteriorated over the past two years."

A source told People, "Amal is in a pretty rough spot right now in the Maldives. "President Nasheed is a really good, forward-thinking man, in a really dangerous situation, and Amal being there is really tricky and really dangerous.

"She's in a place she knew was dangerous going in, but this is her [work]," said the source. "She's doing such an amazing job and taking such big risks and doing it all for no money. These are cases that aren't easily won.

"She's always been this way. She did a little bit of corporate law early on in New York and realized it was boring and she wanted to be a human rights attorney. It's what drives her," says the source.

"It's not about fame or money or any of that for her."
