The Yellow Dog Project could save your pet's life

The dreaded walk-by encounter can be a dog owner’s worst nightmare. You’ve been there, right? The sidewalk has narrowed, and straight ahead your neighbor is grinning as he pulls back his dog, while your dog tenses up beside you. Who knows what will happen when the two of you meet, but one thing is certain, it’s not going to be pleasant for any of you. But imagine a world where such encounters could be avoided. That’s what Tara Palardy had in mind when she founded a movement called The Yellow Dog Project, where something as simple as a yellow ribbon could be what ends up protecting your dog and giving you some peace of mind.

The idea behind The Yellow Dog Project is simple: If you don't want others to approach your pooch, just tie a yellow ribbon around its leash. "Yellow Dogs," as they’re called, are not necessarily aggressive or badly behaved. They could be in training, excessively anxious or fearful, recovering from surgery or any number of other possibilities. The ribbon itself is not a label; rather, it’s a warning. It tells others that your dog, for whatever reason, needs space. Even more, it asks others to politely keep their distance and give that space to you. That is, of course, if all other dog owners know what "seeing yellow" means. And that’s why sharing this message is so important. Spreading the word is guaranteed to save headaches, but more importantly, it could wind up preventing injuries and saving lives.

Laura Simpson, owner of an elderly Labrador with laryngeal paralysis (which makes it difficult for her dog to breathe when warm or excited), is a strong advocate for The Yellow Dog Project due to an encounter that nearly killed her dog. When approached by a careless man and his dog, her requests to stay back were ignored. The man released his dog from its leash, reassuring her, "Don’t worry, he’s friendly," unaware of her dog’s condition. Friendly or not, the ensuing encounter caused her dog to feel threatened, which triggered an episode that could have been fatal. Fortunately, Simpson was able to neutralize the situation, and everyone (both pets and humans) were OK. But imagine how easily things could have gone wrong. Had injuries been sustained, or even worse, death occurred, just think of the heartaches and liabilities found in this single example.

Every dog — just like every person — is different, and it is important for owners to be able to communicate with each other when their dogs are not so social. The Yellow Dog Project is a new way for owners to do exactly that. It is a simple way to say "Hey, please don't approach my dog" without having to open your mouth to get the idea across. Palardy wants to promote the idea that approaching a dog is only appropriate when the owner has given permission, and yellow ribbons are a way of identifying a dog that should not be approached. So far, The Yellow Dog Project has achieved worldwide success, with participants in 45 countries and materials translated into 12 languages. Science can rebuild your burger

It's exceedingly difficult to put a bow on cloned meat. No matter how you describe it — cloned, vat grown, artificial — it just doesn't sound like something you might want to eat. Even worse, as it stands now, it costs about $325,000 to clone a single hamburger patty, and it will likely leave you wishing you had just ordered off a dollar value menu. However, cattle production is a land-, food- and water-intensive process that may one day be unable to meet the demand for beef, and when that happens, beef by science may be the only alternative.

The demand for meat

Projections from animal rights and meat-producing sources agree that the demand for meat is doing nothing but increasing. In fact, according to the USDA, in the next 10 years, pork consumption in China will increase by almost 7 billion kilograms, almost 3 billion kilograms for chicken and almost 1 billion kilograms for beef. Other sources show global demand increasing for meats of all types everywhere in the world.

Several factors contribute to this increased demand. The first is that the world's population continues to grow, and more population means more mouths to feed. Secondly, some formerly impoverished areas are starting to enjoy financial success to a greater degree. With more money comes a greater ability to buy better food, and this oftentimes means more meat.

Natural meat production

Right now, meat is naturally produced on ranches, on farms, in livestock pens, etc. These techniques, though traditional, require land on which the animals graze, water and grain to feed the animals and areas for the animals' waste products. As demand for meat grows, so too will the stress placed upon the food industry to meet that demand. That means more land for keeping animals, more land to grow grain and more places to store animal waste. There is only a finite amount of land on which to raise these animals and a finite amount of resources to care for them.

At some point, the food industry will not be able to keep up with the demand for food using traditional methods. Now, that doesn't necessarily mean tomorrow or in 10 years, but a breaking point will be reached.

Scientific meat product

One answer to this problem is cloned meat. The process used to produce the $325,000 burger takes bovine stem cells and grows them to produce meat that should be identical to the shoulder meat (essentially a roast) found in cows. While the meat doesn't necessarily pass the gourmet test yet, the process proves that with a little more research, large quantities of meat can be grown in a small area of land, using fewer resources and taking advantage of production techniques that are not harmful to animals.

Of course, the perfection and adoption of these techniques still faces some hurdles. First, the technology hasn't been perfected to do the experiments on a large scale. We still need to understand the process and cost of producing meat this way. Second, massively cloned meat will need to be inspected and tested before being served to the audience, and frankly, someone should study the long-term health effects of artificial meat and the chemicals that make it. Last, and perhaps most important, there will likely be a stigma against it for some time to come, even among developing nations. American diners are not ready for cloned food, no matter how it's packaged, and many non-American markets will feel the same about the fake cuisine.

Still, it's hard not to see this as a step in the right direction for meat lovers who also happen to be environmentalists and animal rights activists. It will soon be possible to get non-animal meat that had minimal impact on the environment during its creation and that will, hopefully, one day taste good too.

"That's false, Lauren Conrad and I never dated," Jenner said to his co-host on the Brody Jenner Podcast with Dr. Mike Dow, as Dow read a list of Jenner's ex-girlfriends. "Lauren and I have always been just friends," he continued. "We worked together on a show called The Hills where we had to pretend like we were dating, but we never dated." In addition to Conrad, Dow's list of Jenner's former dalliances included Avril Lavigne, Kristin Cavallari and Nicole Richie.

Jenner admitted that his relationship with Kristin Cavallari was also staged during the time they were filming the MTV reality show. "I dated Kristin when we were very young... when she was on Laguna Beach and I was on a show called Princes of Malibu with Spencer Pratt," he said. "We met at a party in Hollywood, but during [The Hills] when we filmed, Kristin and I did not date, we were not hooking up." Cavallari is now happily married to NFL player, Jay Cutler, and the mother of two boys.

So this means reality TV is not real? Hold on a second, our world is tumbling down around us.

While his The Hills relationships may all have been a facade, we know one name on Dr. Dow's list that was for real: Avril Lavigne. The two went public with their relationship on Twitter in 2010 and were often seen partying together in Las Vegas before breaking up in early 2012. At one point, Jenner had even shaved the letter "A" into the side of his hair in honor of his punk-rock princess.

While the son of Olympic athlete, Bruce Jenner, might have been all about scripted relationships and TV drama when he was younger, it seems that nowadays, he's content keeping things low-profile. Even though the reigning reality TV queen, Kim Kardashian, is his stepsister, he opted out of flying overseas for her extravagant wedding to Kanye West this past May.

While midwives can certainly help with many things doulas do, like helping you get into comfortable positions for labor and delivery, using comfort measures and encouraging you, they aren't always able to.

Hospital labor and delivery units are busy, and even the most hands-on midwife may not be able to provide the labor support she'd like to give you.

Amy Romano, a certified nurse midwife, explains, "While midwives value giving one-to-one attention, they may be caring for more than one woman at once, but doulas are there just for you."

Home-birth midwife, Kimberly McGuiness-Rook, C.P.M., says, "Being surrounded by a supportive birth team that truly believes in your body's ability is critical as it can greatly impact the mother's experience in such a positive way. Oftentimes families using a midwife will assume that there is no place for a doula within that dynamic and, truthfully, as a midwife myself I can personally attest to that being far from the truth. The synergistic blend of having both a doula and a midwife as part of one's birth team is wonderful and really works well for everyone involved."

I had a home birth with my youngest baby, and my midwife (whom I adored) questioned why I was having doulas since she would be there. In the end, she understood my choice to have doulas and a midwife. I had a short, very intense labor with a huge baby (over 11 pounds) and 12 years later I can tell you it was my doulas who calmed me when no one else could (not even my husband).

Bottom line? Whether you choose home or hospital birth with a midwife, think about also having a doula. You can never have enough support when it comes to giving birth. Good luck!

Beyoncé recently changed the lyrics to her song "Resentment" to make the words seem specific to her relationship with her husband. The alterations also made it seem as if there is a specific woman that Bey is calling out. The changes left songstress Mya scrambling to defend herself, after buzz began that she was Jay Z's longtime mistress.

"Never did, never was, never will," Mya wrote on Instagram on Thursday. "Illegitimate, thirsty sources with no facts and that's the 'media' for you-especially today. I play second to no one, pay my own bills, have my own label, own management company, rely on God only and respect myself and & marriage too much for nonsense."

The images posted by the "Crazy in Love" singer don't really match up with the speculation surrounding her private life. Still, Beyoncé is very social media savvy and clearly understands how to use it as a tool for impression management. During the now-infamous Solange feud, the songstress utilized the same tactic that she may be using now when she blasted Instagram with photos of herself and her sister.

Calm down, Gleeks: Chris Colfer's Twitter was hacked

Fans of the hit show had their world disrupted Thursday when the young star, who portrays beloved character, Kurt Hummel, seemed to tweet a major announcement.

Followers of the 24-year-old star's verified Twitter account saw this message appear out of the blue: "Due to personal issues, I have been let go from the cast of GLEE. Explanations will come shortly … "

Gasps were heard from Gleeks everywhere in response, likely including from Colfer himself.

It turns out the California-born actor's account was hacked, and the supposed Glee update was nothing more than a hoax (an ice-cold slushy to the face, if you will) played on faithful fans.

"It appears his Twitter was hacked," Colfer's rep, sent to explain the hullabaloo to People later that same day, stated. "He's on a flight and he will be returning next season. Fans, don't worry."

In a statement, Fox, the network which broadcasts Glee, also shared, "We've been alerted that Chris Colfer's Twitter account has been hacked. Rumors of his dismissal from Glee could not be further from the truth. We love Chris and look forward to working with him again this season."

Thus far, the young singing star at the center of the hacking drama hasn't yet addressed the issue at hand. While the original faux tweet has been removed, Colfer's most recent message remains a tweet talking about his The Land of Stories books with the highly-enthusiastic Brooke Lipton, who has worked on Glee in choreography.

Witches of East End creator promises "darker, scarier, sexier" Season 2

And series creator Maggie Friedman knows that she left us in suspense.

"In the premiere, we pick up a week later," she says. "Joanna is still struggling, she's not doing so well healthwise, and while Wendy, Joanna and Ingrid know that the portal opened, they all suffered a memory loss on who came through. And Freya's trying to figure out where Killian is, while Dash has to contend with the aftermath of wondering if he really did kill his brother."

Season 2, which premieres on July 6 on Lifetime, is definitely off to a dramatic start, and Friedman is enthusiastic about the changes another year has brought to Fair Haven. "This season is darker than last year, we wanted to take it to darker, scarier, sexier places, but there's still a lot of humor. The look of the show's changed a lot, too, which I'm really excited about. We have a new DP [director of photography] and a new director who brought it to a whole new level, visually and cinematically. It looks amazing, and we're telling some crazy cool stories."

One of the new stories she's particularly excited about involves a long lost member of the Beauchamp family — Joanna's son Frederick, whom Freya and Ingrid have never met. The recurring themes of family and forgiveness have always loomed large in the Witches of East End universe, and the return of Frederick is no exception. "He betrayed the family hundreds of years ago. Wendy does not trust him, but Joanna is willing to re-embrace him and welcome him back into the fold. There's some conflict about his agenda and if he can be trusted. And we like to keep the audience guessing about who he really is and what he wants. We also learn he was Freya's twin! So the two of them have these special abilities that only work when they're together."

The love triangle between Dash, Killian and Freya was also left up in the air at the end of the season. While Freya may have chosen not to marry Dash and tried to chase down Killian, Friedman promises there's still plenty of potential left to be explored. "Last season's love triangle has become more of a love pentagram," she says. "Freya was once at the center, and now she's at a different point. We've kept it all very tortured and romantic. It was important to make it high stakes, keep it all wrong and sexy and dangerous."

However, Friedman laughs when she's asked to choose between Dash or Killian for herself. "I can't say! They're both stunning, interesting men, and they're both very talented guys, and I think they each have their individual strengths. Dash is on an interesting journey this season. A dark one. We get to see a new side of him, which is fascinating, and Killian is that bad boy, romantic, 'you're drawn to it but you know it's bad for you' kind of guy. That's sexy in its own way."

Dark, sexy and dangerous are some of Friedman's favorite words to describe the new episodes, but one of the biggest themes explored is still that subject of familial forgiveness. "It's a lot about picking yourself up after making mistakes and going on. There are a lot of repercussions from the events in the first season, so this year, we're exploring how you forge ahead even when you've made a mess, clean it up and keep going. It's also a lot about the women, especially the younger generation, coming into their own and learning to own their power."

This is Friedman's second show exploring the concept of women empowering themselves through witchcraft after her stint producing ABC's short-lived Eastwick, an adapted version of the John Updike novel The Witches of Eastwick and the 1987 film starring Jack Nicholson and Cher. "I love the wish fulfillment aspect of witchcraft. I grew up with Bewitched reruns. If I had a day home sick from school, I was watching Bewitched, and I fell in love with that idea of having those kinds of powers. I think witchiness is a very feminine thing and yet it's also very strong, it's powerful, it's feminine, and it's a way to own your power as a woman. Witches are such a great metaphor for how to be strong and well-rounded and unapologetic."

It's one of our favorite things about Witches of East End. Joanna, Wendy, Ingrid and Freya are all such different, widely varied women, and the show never makes judgments on which is the best way to be. Each woman is vibrantly drawn, completely her own person and strong in her own way, and even Friedman can't choose a favorite. "I aspire to be like Wendy, because I think she's a bada**, and I love her kind of spirit and attitude. She doesn't let things get her down, she does what needs to be done, and she's hilarious," Friedman says. "But then there's Joanna's nurturing calm, Ingrid's intellectual smarts and Freya's free spirit. They all have something I would like to cultivate in myself."

The relationships between both sets of sisters has also been a great counterpoint. Joanna and Wendy's bond was strained after a hundred years of estrangement, while Ingrid and Freya have always been close, but this season, Friedman wanted to shake that up. "Last year, Ingrid and Freya were very tight and loving. Obviously, Ingrid can be a little mothering towards Freya and give her a hard time about her bad choices, but they had each other's backs. But there are definitely some things that come between them and we get to see some really good conflict and fighting that we hadn't explored before. Their relationship gets tested more this year than last."

Of course, we've only seen Ingrid and Freya's bond in the current century. The sisters have lived dozens of past lives that have only been briefly touched on. We've seen a version of the girls in 1906, where Freya was essentially the same — a free-spirited bartender in love with her Killian look-alike piano player. Ingrid's intellectual curiosity, however, led her down a darker path, and it's one of Friedman's favorite things to play with.

"I love that aspect of our show, going to different time periods," she says. "We have a really, really fun episode where we explore one of Freya's past lives, and we get to see her in the 1970s. She's still Freya, but like 1906 Ingrid, this is a darker, wilder version of Freya. It's pretty rad and I'm excited about it. I love exploring their past and how we see that your strengths can become downfalls."

It's clear Friedman also has a soft spot for mischievous, pragmatic Aunt Wendy, who never lets a little thing like moral ambiguity get in her way. "Wendy was actually supposed to die in the pilot!" she reveals. "But when we saw what Mädchen was doing with the role — she just has so much light and life inside her. We begged her to stay, we knew she was a keeper." Though Wendy never appears in the original Melissa de la Cruz novels on which the show was based, Friedman says the author loves the addition. "When I met Melissa, she came to the set when we were shooting the pilot. I was nervous, I thought she'd be angrier because I changed so much stuff, and instead, she was all "I love Wendy! She's my favorite!" and I kept thinking 'Oh, thank God'," she laughs.

There's certainly a challenge in adapting a beloved book series for TV, and Friedman made a definitive choice to guide her when she was conceptualizing the show. "I made a call early on when I wrote the pilot that I was going to take the foundation of the book, which was family relationships, and I would strive to make it my own and create stories that would surprise even the people who knew the books intimately. So even from the beginning, we went pretty far-field. We talk a lot about the books in the writers' room, we love them and we definitely mine them for story points, but we wanted to create something in the spirit but is its own animal. I love what Melissa created so much, so I try to stay true to the spirit of it, but I did have to figure out a way to write it in my voice."

We think she's definitely succeeded! We're ready to head back to Fair Haven for another dark, sexy summer — it's shaping up to be one wild ride.

Get the look

  1. Start by sectioning out your hair into workable half up, half down sections. Then separate your entire head into 3 sections — 1 on either side and a mohawk section.
  2. Taking the top mohawk section, split it into 3 sections to start 3 small French braids.
  3. On your side section, make an inside out French braid (or for an easier version, just regular French braids). Braid all the way to the ends within each braid and secure with an elastic.
  4. Split the bottom half of hair into 2 braids. Start with top braids and braid, adding in side braids and bottom braids to complete Kendra's braided French braid.
  5. Add hairspray (Editor's note: We love Oribe Dry Texturizing Spray) and pin up any loose hairs.

Onlookers described them as "eerily human." The life-size robots have silicone skin covering artificial muscles, which, combined with their mind-blowing circuitry, cause them to speak smoothly and act with believable mannerisms. Oh, and they're soft-spoken, conventionally attractive women. Of course they are.

One of the inventors, Hiroshi Ishiguru, seemed genuinely enthused about the science. "Making androids is about exploring what it means to be human by examining the question of what is emotion, what is awareness, what is thinking." And the science is really cool. Artificial intelligence has come a long way from its chess-playing, auto-dialing past. The Turing Test seems almost antiquated at this point.

But I can't help but think that men have been trying for years (millennia?) to create the "perfect" woman whom they can program to do, be and look like whomever they want. Perhaps this isn't a fair comparison, but these seem a little too close to a RealDoll, a sex toy so realistic that owners have been known to treat it like it's human — dressing it, loving it, taking it out to dinner. Some people end up preferring these "relationships" to messier ones with real people. Real women are so hard to control.

Perhaps there is a legitimate need for lifelike androids. I can think of several fields that would be safer, easier and more cost-effective to use a robot. But even in mundane situations, I would still prefer to interact with a real human. We already use our technology as a shield and go-between for so many of our daily interactions with loved ones, co-workers and businesses. While I love my online banking and Amazon shopping, I do think there's a line where we give up too much human interaction, and we suffer for it. Some of us may have already crossed that line — no robots necessary.

Maybe I'm just a grouch. Maybe this is a great advancement, and soon we'll all be having our houses cleaned and our hamburger orders filled by adorable 'bots.

Ishiguro ultimately hopes to make robots more affordable saying, "[It's] no different than owning a laptop." But do our laptops look like human women? There is a difference.

Is a dog cage imprisonment or parents doing their best?

Tracy Trang Lee and Loi Vo, who speak little to no English, allegedly confined their 11-year-old son to a 6 x 6-foot dog kennel in their home. An anonymous tip led authorities to their house, where they found the kennel lined with a mattress and placed in a bedroom. They suspect the boy was locked in when his behavior became violent and out of control due to his autism.

It's so easy to jump to judgment when you hear a story like this — how can any parent toss his or her kid in a dog cage, for whatever reason? It's hard to feel sorry for folks who imprison their child. But if you haven't lived with a child with autism, it can really be difficult to put yourself in these parents' shoes.

This story is tough for Kimmy, mom of four, to hear. Earlier this year, her 2-year-old daughter was diagnosed with autism, and the plight of this child and his family hits close to home for her. "He wasn't really living in the cage, but it was used to help control his behavior," she shares. "I can barely hold Suzume when she has an outburst — I don't know how they are expected to hold down an 11-year-old and keep him from hurting himself and others. Obviously it's not ideal but options are limited. I think there is a lot more to the story."

Autism and falling through the cracks

Yes, there are programs for children with disabilities and their families, but what do you do when you can't find your way through the red tape? No, you should not imprison your kid in a dog cage. If your child is a danger to himself or others, then he may need medical help or hospitalization, not imprisonment in his own home.

The parents might have simply not cared enough to get him proper treatment, or perhaps they were desperate and didn't know what else to do. As children grow, they become stronger, and even if their minds don't mature along with their bodies, it can be harder and harder to maintain control of them in an emotional or violent situation. However, it is frightening to think about what could have happened to this child had an anonymous tipster not gotten wind of the conditions in the home.

Fortunately, the boy was in good health but the parents were not cooperative and initially refused to speak to child protective services when they arrived at the house. Authorities haven't determined how long he was kept in the cage, but he and the other children in the home were placed in protective custody while the case is investigated.

Jackson was excited to share her wonderful news, but she wasn't above having a little bit of fun with her friends first. "I want to share the news with her and tell her that I'm highly engaged and I'm really excited about it. But before I do that, I kind of throw a little left-ball to her. I try to make her believe that it's somebody totally different than Jeffré, and she falls for it," Jackson said about her practical joke.

Jackson's friends decide to get her back though with an impromptu search for the perfect wedding gown. "You'll also see, once the girls know, [once] they find out that this is solid and this is what I want, they start rushing me and pushing me into going to look at dresses," Jackson shared, adding that there are also a few things viewers won't see in the episode.

"What you don't see, on this episode, is that I didn't want to try on the dresses," Jackson said. "There was no way I was going to get in a dress, for many reasons. But what I did do is I had one of my friends [try] on the dresses for me and she looked fabulous in them."

More wedding planning took place with her fiancé. "I also went and looked for locations with Jeffré at the St. Regis hotel," Jackson said. "We thought this would be a beautiful and nice place to go, but I wasn't that keen on it."

Again, there was more to the story than what viewers will see in the episode. "It looked really beautiful, but what you didn't know is that, after I got there, I kind of changed my mind a little bit. So Jeffré and I, we had quite a bit of an extensive conversation because I was kind of backing out of things."

One woman's escape from sex trafficking

Gwen is a woman with speech as colorful as her hot-pink hair and gold toenails. She winks at me, and a warm smile spreads across her glowing brown skin. "See these colors I wear? I never got to wear these colors as a kid," she says. "My pimp made me wear black and red when I sat on the bed to wait for customers. I wear bright colors for the girl I was at 8."

As she alternates between tears and incredulity, Gwen explains to me that a family member introduced her to the sex industry when she was just 4 years old. "Of course, I didn't know what I was seeing. I just saw all these beautiful white women who wore furs and had pretty hair," she says. Within a few short years, that same family member prostituted her to paying customers. The air feels heavy when Gwen quietly says, "I was 8 when a big fat f*** made me have sex with him for the first time. What choice did I have? When you start this young, you either do what you're told or you die."

Underage sex work in the U.S.

Many Americans believe that sex trafficking involves kidnapping and smuggling of international victims, but the typical victim of the crime is an underage U.S. citizen who, like Gwen, is prostituted by a family member or trafficker lurking under the guise of benevolence.

Children who are trafficked into the industry like Gwen don't remain children forever. Surviving the abuse and exploitation — which often escalates through the teenage years — requires a mixture of numbing and hardening. "I started doing drugs when I was 10, and got into crack by the time I was 11," she says. "I had to numb out. I was doing it all — prostitution, strip clubs, turning tricks. My entire family turned their backs on me, so I started selling my body for crack or just a place to stay." She was 14 when her mother and pimp violently attacked her and kicked her into the streets.

A turning point and survival

For the next 23 years, Gwen prostituted and numbed herself out on drugs so she could survive. Between her family, her friends and her johns, Gwen's life was a revolving door of betrayals. "God, it still hurts," she whispers into the air between us as she wipes tears from her cheeks. "It was an existence, not a life."

After nearly 30 years working in the sex industry, something changed for Gwen. Even today, she's not entirely sure how and why it changed, apart from God. She tells me that she credits the God of her Christian faith for helping her see that she was missing the lives of her children, and that she wanted to give them more than her mother gave to her. "God gave me hope for my future that I didn't know was there," Gwen says.

The next few years of change were excruciating. "I had to confront my inner demons," she explains, "and it made me feel like my heart was ripping apart." But on the other side of her grief was life: An organization called New Friends New Life provided her with social work services, counseling, job training, educational assistance and intensive mentoring. Gwen now has a good job and she's been sober for seven years. She also volunteers her time to advocate for other women who share her story.

"I think that people don't understand how young prostitution starts and that many women in the industry don't ask for it," explains Gwen. "I hope that people who drive by and see a woman on the street can stop and think, 'she has a good heart,' or 'she doesn't want to do this, but she has children who need things and she doesn't know what else to do.'"

(By the way, doctors told us that it is perfectly fine for mothers to have a few alcoholic drinks while breastfeeding, without the need to "pump and dump," as a very small percentage enters the breast milk.)

Gluten-free vanilla-lavender crème brûlée

You might enjoy créme brûlée for dessert when you're dining out, but I'm here to tell you it can easily be made at home. This gluten-free recipe for vanilla-lavender créme brûlée is luxurious with a great flavor.

What fun it is to break into the caramelized sugar topping and dip into the smooth, rich custard. This dessert is easy to make and amazing to serve. I used a kitchen torch to caramelize the sugar to make the crunchy topping. If you don't have a kitchen torch, you can use brown sugar to top the custard and your oven broiler to caramelize the sugar.

Gluten-free vanilla-lavender crème brûlée

Note: Gluten can be found in many different foods and products, from ketchup to soy sauce to candy and seasonings. While SheKnows tries to ensure that these recipes are gluten free, carefully read the ingredient labels of all food and food products you use for these recipes to ensure they are also gluten free.

Gluten-free vanilla-lavender crème brûlée recipe

Serves 4

Ingredients:

  • 2 cups heavy cream
  • 1-1/4 teaspoons pure vanilla extract
  • 2 teaspoons food-grade dried lavender buds
  • 6 egg yolks
  • 1/3 cup sugar, plus 8 teaspoons, divided

Directions:

  1. Preheat your oven to 325 degrees F. Place 4 (6 ounce) ceramic ramekins in a baking pan with high sides, and set it aside.
  2. To a saucepan over medium-low heat, add the cream, vanilla extract and lavender buds. Bring the mixture almost to a boil, and then remove it from the heat.
  3. While the cream mixture simmers, whisk together the egg yolks and the 1/3 cup of sugar. Mix quickly until incorporated or for 2 to 3 minutes.
  4. Pour the cream mixture through a fine-mesh strainer into a bowl. Discard the lavender buds.
  5. Temper the egg mixture (to keep the eggs from cooking when the hot cream is added to it) by slowly adding a portion of the cream mixture to the egg mixture while constantly whisking. Continue adding the cream mixture a little at a time until all of it has been added.
  6. Fill each ramekin with the mixture about 3/4 of the way to the top.
  7. Add 3 to 4 cups of water to the baking pan, until it reaches about 3/4 of the way up the outside of the ramekins.
  8. Carefully place the baking sheet in the oven, and bake for 35 to 40 minutes. The custard should be done when it is slightly jiggly and not thoroughly firm.
  9. Remove from the oven, and allow to cool completely.
  10. You can refrigerate the custard overnight to serve the next day. If you do, wrap each ramekin tightly with plastic wrap, and then refrigerate them (you'll add the sugar to caramelize the tops just prior to serving).
  11. If you're serving them the same day, then make sure they have cooled. Once cooled, add 2 teaspoons of sugar to the top of each. Use a kitchen torch, moving in a circular motion and about 3 inches from the tops, to caramelize the sugar until it is golden.
  12. If you don't have a kitchen torch, then use brown sugar to top the custard instead of regular sugar. Place the ramekins onto a baking sheet. Heat under the broiler, keeping a close eye on them, until the sugar is caramelized.
