Apple pie cookies with salted caramel glaze
Recipe adapted from Baking Bites
Yields about 18 medium cookies
Ingredients:
For the cookies:
- 1-1/2 cups flour
- 2 medium apples, finely diced
- 1/4 cup unsalted butter
- 1/4 cup unsweetened applesauce
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- Sea salt
- 3/4 cup brown sugar
- 1-1/2 tablespoons apple pie spice
- 1 teaspoon vanilla
- 1 egg
For the caramel:
- 1/3 cup light cream
- 1 cup packed brown sugar
- 1 teaspoon vanilla
- 4-1/2 tablespoons unsalted butter
- Sea salt
Directons:
- In a medium bowl, mix flour, baking powder, baking soda and salt together. Stir in apple pie spice and set aside.
- In another medium bowl, cream butter, applesauce and sugar together until creamy. Add in egg and vanilla and mix until just combined. Gradually stir in flour until mixture is moistened. Stir in apples until mixed. Cover mixture with plastic wrap and chill for at least one to two hours.
- Once dough has chilled, preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Place about one tablespoon of dough, one inch apart on the parchment paper. Bake for 11-13 minutes or until golden brown.
- While cookies bake and cool, prepare caramel by heating butter, light cream, brown sugar and vanilla in a medium saucepan over medium-low heat. Whisk the mixture for about five minutes or until mixture starts to thicken. Remove from heat and let sit for about two to three minutes or until sauce is thick.
- While sauce is warm, drizzle about one tablespoon of caramel onto each cookie. Then sprinkle with a pinch or so of sea salt. Serve warm and enjoy!
