Don't get bullied by store cashiers into a credit card this holiday season

Well, the good news is that I’m not alone. According to a new survey by Credit.com, an astonishing 31 percent of Americans feel bullied by store clerks into opening a store credit card during the holiday shopping season. Of those that do succumb to the pressure and open a store credit card, almost half (49 percent) regret it and more than half (57 percent) avoid returning to the store where they felt bullied.

Is it really worth it for stores to force their sales clerks to get customers to open credit cards? Based on this survey, it seems they wind up losing customers by pressuring them into doing something they do not want or plan on doing. With the average American credit card debt sitting at more than $15,000 per household and growing, are credit cards really the answer to better personal finances and an improved economy?

While increased spending does lead to more jobs and, therefore, a better economy, you should still only be spending equal to or less than you earn. Living above your means is stressful, it’s expensive (hello 27 percent interest rates) and it traps you into your current lifestyle. While sales clerks can put an immense amount of pressure you on, unless you planned on opening the card before walking into the store, it’s best to continue politely saying no and walking away. Remember, store clerks have to ask you all those questions. They’re forced to try to convince you why you need a credit card.

Before opening a store credit card, Credit.com’s Gerri Detweiler shares five questions you should ask yourself.

  1. How much will I really save? Let’s be honest. You’re usually suckered into opening one because of the discount you will save on your purchase. But is it worth it? Ask yourself if opening the card will make you spend more money at that store down the line. If so, probably not worth it. Instead, look for a coupon.
  2. How often do I shop here? Again, if the store credit card is going to make you shop at that store when you normally wouldn’t, don’t do it. Detweiler advises to set the threshold in advance. For example, only getting the credit card if you already shop there once a week.
  3. Will it help or hurt my credit? If you’re already knee-deep in credit card debt, do not open the credit card no matter how much you’ll “save.”
  4. Is this the right time? If you’re planning on using a loan to purchase a house or a car within the next six months, it’s best to decline the offer.
  5. Is this store credit card good? Check reviews of the best store credit cards on Credit.com. Some cards aren’t actually all that bad and offer rewards to savvy shoppers. Again, the key is knowing in advance whether or not you want the card and not opening one because of pressure from the sales clerk.

The National Retail Federation recently released its Holiday Consumer Spending Survey, stating that Americans will spend an average of $804.42 this year on gifts, up 5 percent from last year. Sales clerks know shoppers may be more convinced this time of year to open up a credit card.

Before heading out for your holiday shopping extravaganza, create a budget and stick to it. Know in advance if you’re going to open a store credit card and know which stores you plan on opening one at.

At 5-1/2 weeks old, Scout came to her forever home, and, feeling afraid, decided Charlie would be her comfort zone. She cuddled up to him that night and fell fast asleep.

I have to admit even I was impressed by the transformation this leaf craft took as we transformed long leaves into feathers. My next challenge is to try to get my kids to turn bigger leaves into faux peacock feathers.

Supplies:

  • Assortment of long leaves
  • Assortment of acrylic paints
  • Large craft paintbrush
  • Small craft paintbrush

Instructions:

  1. First, press your leaves between the pages of a book overnight to help them lay flat.
  2. Next, use your large craft paintbrush to cover the leaf on one side with your base color. Allow to dry a few minutes.
  3. Then, use your small craft paintbrush to add thin lines of another color in feather-like strokes.
  4. Finally, allow to dry and admire your colorful feathery fall leaves.

Instructions:

  2. Next, begin tying your fishing string or clear thread to the stem of each leaf, leaving space between each leaf until you're satisfied with the length. Keep in mind that it's more interesting if each strand is a different length.
  3. Then, tie a bead at the bottom of each string to weigh it down when it hangs.
  4. Finally, tie each chain of leaves along the length of the stick or dowel and hang on an eave to blow in the crisp fall breeze.

I can't say I was surprised when I came across the statistic that Match.com reported 76 percent of singles polled say that their breakups occurred before, during or after the holidays. And FindLaw.com reports that U.S. divorce filings spiked in January and March (post V-day, perhaps?). While many couples find that merry and jolly aren't the only feelings that bubble up during those fast and furious months, you don't have to let it turn your relationship into a lump of coal.

  • Most importantly, the key to keeping the love alive during the holidays is communication. Set a date to discuss duties before the holidays hit and make a list of who does what so you don't fill your stockings with resentment instead of joy.
  • And when you're making holiday plans, remember to be fair with both sides of the family. You may not love your brother-in-law's annoying holiday jokes, but spending equal time with your family and your in-laws, or alternating holidays with each extended family every year, can cut down on holiday head-butting with your spouse.
  • Once the tidal wave of holiday happenings washes over your schedule, remember to take time for each other. It doesn't have to be a made-for-movie love affair, but you can sneak in couple's time with quick dates, going holiday shopping together, meeting up for coffee or sending sweet sentiments via text — hey, at least you'll know you're on each other's minds.
  • Want to bump the romance up a notch during the holidays? While you're helping your kids write letters to Santa, scribe a love letter or two to your very own St. Nick or Mrs. Claus. Be sure to include your most secret holiday wishes you can't send to Santa.
  • While you won't want to hear this, one of the best things you can do for your relationship during the holidays is to keep drinking to a minimum. No one's saying you should lay off the eggnog, but overindulging can amplify tensions and conflicts which are already strained.

Now, before you toss your marriage out with the tinsel, sometimes the easiest thing you can do is keep things in perspective. Once you acknowledge that stress makes things seem like a bigger deal than they are, you can still survive family holidays without strangling your spouse. Remember, the perfect family holiday really only happens in the movies.

And Day, who recently joked on Conan that he has a "shrine" to fellow star Zac Efron in his house, touched on his friendship with the Neighbors star.

"We are neighbors, we are buddies. I was just texting him, actually," Day said. "We don't hang out too much because we're both pretty busy, busy guys, but yeah, he's been over to the house. He's a great guy and I don't actually have a shrine, but I do get some of his fan mail, so maybe I should make that shrine."

Hill claims that Cosby's abuse began in the 1980s, when she was only 15. According to the actress, she would go to his hotel room during the evening, where he would insist she have a drink. She now believes she was drugged and remembers Cosby touching her and kissing her. She cut off contact with him when she turned 19.

3. Angela Leslie

Leslie, a former model and actress, said the comedian forced her to masturbate him in 1992 when they were together in a hotel room. She said Cosby offered her a drink, but she refused, according to The Daily News.

4. Louisa Moritz

According to TMZ, Moritz said she was assaulted in 1971 while in the green room before her appearance on The Tonight Show. Cosby came in, took out his penis and forced it into her mouth.

5. Therese Serignese

Serignese says Cosby raped her in 1976 following a show in Las Vegas, according to Fox News. She said she went backstage, where she and Cosby were alone. He gave her two pills and a glass of water, which she took. Following that, she describes feeling drugged but remembers Cosby standing behind her, raping her.

Bowman described her experience in a Washington Post column, saying that she was only 17 when Cosby drugged her, causing her to black out. She woke up in only panties and a man's T-shirt while Cosby loomed over her. She says she is certain she was raped.

Tarshis, who was an aspiring comedy writer, says she met Cosby when she was 19 years old. After giving her a drink, he forced her to perform oral sex on him. Tarshis said it would have gone farther, but she made up a fake story that she had a sexual disease to prevent him from raping her.

8. Janice Dickinson

Dickinson told Entertainment Tonight that Cosby gave her red wine and a pill when they were together in a hotel room in 1982. She says the last thing she remembers before passing out that night is Cosby undressing and getting on top of her. When she woke up in the morning, there was semen between her legs.

9. Linda Joy Traitz

Traitz claims Cosby offered her a ride home from her job working as a waitress when she was 18 or 19. Instead of taking her home, he took her to the beach and offered her drugs and pills to relax. After refusing a few times, Traitz claims Cosby groped her chest, pushed her down and tried to lay on top of her. She was able to push him away and, after trying to calm her down, Cosby took her home.

10. Andrea Constand

Constand filed a civil suit against Cosby in 2005, saying that he touched her inappropriately when they met at his home. According to lawyers, her suit would also include testimony from 13 unidentified women. The suit was settled out of court.

Green wrote an article for Entertainment Tonight alleging that in 2005, Cosby drugged her and attempted to assault her.

Following the incident, Ferrier claims the two had an on-and-off consensual affair that lasted several years. She told People magazine she felt like she couldn't say no to him.

13. Kristina Ruehli

Ruehli is speaking out against Cosby, alleging that the comedian invited her to a party at his home but, when she got there, she was the only guest. He made her two bourbons that knocked her out and, when she woke up, Cosby was trying to force her into performing oral sex. Ruehli says she was able to push him away and flee from the house. She also believes he drugged her drinks.

Cosby is already facing the repercussions of these allegations. NBC canceled his upcoming sitcom, which was supposed to be the comedian's big TV comeback, and Netflix has canceled the Cosby special, Cosby 77, that was scheduled to air on Nov. 28.

We get what she's trying to say. Hannah Montana was famous for balancing her own two different worlds: rock star and regular kid. But Jenner's situation is far from family-friendly Disney Channel stuff.

Possibly the biggest difference is that Hannah Montana eventually faded into obscurity when Miley Cyrus dropped her kid-friendly image and went for a sexy, grown-up pop star look. Jenner isn't likely to disappear from the limelight in the same way, at least according to Jane Hertzmark Hudis, global brand president at Estée Lauder, who explained to the New York Times why Jenner is the perfect face for the company.

"I think what's so exciting about her is that she has this social media influence along with a fashion credibility in a distinct way that speaks to millennials," Hudis said. "There is really no one else like her out there."

The partnership was just announced when Jenner released a promotional video last week.

Who's hotter, daddy edition: Ryan Gosling vs. Ryan Reynolds

Reynolds is kicking off Thanksgiving early with an essay he penned for Time magazine's Time for Thanks series. In it, he tells a story about a time he was especially thankful for his brothers and how they've always had his back.

"Actions speak louder than words," Reynolds writes. "And for one particular memory I have, the action was deafening."

Reynolds is the youngest of the four boys, so he took a fair amount of torture from his brothers, he writes. And when 13-year-old Reynolds decided to "test the waters of questionable fashion and independence" by piercing his ear, his brothers' reactions were pretty much what one would expect them to be.

"My brothers were characteristically detailed with their feelings on the matter," Reynolds writes. "My oldest brother told me I was going to die tonight. Like, DIE. 'Do NOT do this. If Dad sees that thing in your ear, he’s gonna release your soul to the wind.' My middle brother bluntly stated that, 'Bad call. Dad’s going to turn you into a liquid, dumb-ass.' And my other brother took umbrage in the act itself, 'Earrings on dude’s [sic] are lame. Especially on a dude.'"

It sounds like their fears about Reynolds' father were pretty legitimate — Reynolds describes him in the piece as "a former cop, former boxer and full-time landmine."

But when Reynolds showed up to dinner with his freshly pierced ear, dreading his father's reaction, his brothers had a surprise waiting for him.

"Before I could utter a single futile syllable he said… 'P***ies,'" Reynolds wrote. "My head snapped up immediately. I could see he wasn’t just looking at me. His confused eyes darted spastically between all four boys in shock, disbelief and directionless anger. What he was in fact looking at, were four young men, sitting at a dinner table, each, with a freshly pierced ear."

A bumpy return

To recap, when Kendra returned from an idyllic trip to Costa Rica last week, during which she reconciled with her estranged father, she stepped right into drama created by her other recently reconciled parent, her mom Patti.

And while Kendra's reunion with baby Alijah is adorable, the one between Kendra and Hank — who came home from Costa Rica a day before she did — feels awkward at best.

Still, when Hank brings up his parents and how grateful they were to have spent time with Alijah, it's clear that Kendra is struggling with more than her feelings about Hank.

His parents, who she explains "have been amazing," are the unseen family members Kendra is fighting to hold onto. To be honest, it makes me feel more empathetic toward Hank, knowing he comes from such good people.

Things are looking up

Before Hank leaves to head back to his apartment, he gives baby Alijah a kiss and then kisses Kendra's forehead. Call me a sucker, but I got a little heart pang.

Surely anyone who has gone through a tricky breakup can relate, right? You want them, but you don't. You're angry, yet there's still so much love there.

What seems like five seconds later, Kendra is excited about a potential TV job in Australia, as it could pay her way as a single mom.

The lunch meeting with the TV show producer seems to go well, and Kendra basically bounces to couples' therapy musing about "the next step" in her career.

But while waiting for their session to start, Kendra scrolls across a tabloid headline reading "Mom lashes out!" This, says Kendra, is the ultimate betrayal.

As Hank tries to comfort Kendra, who vows her relationship with her mom is over, their therapist calls them in.

And in that seemingly tiny room filled with wall diplomas and emotional strife, Kendra has an epiphany:

Her mom is an example of someone who wants to hurt her. Hank is not.

"I don't want to be mad at him anymore. I want to know the truth and be OK with the truth and accept it," Kendra says. Then, naturally, the therapist asks what we all want to know: Is she getting the truth?

Well, not in this therapy session, she's not.

A last first date

The therapist suggests the couple rekindle their trust by going on a date night.

When Hank shows up with flowers to pick Kendra up, admittedly, I do find myself kind of rooting for these two.

I'm not alone, either. Their best friends, Jessica and Kyle, seem totally starry-eyed, which once again begs the question: With so many good people having his back, could Hank really be a bad guy?

Before long, Hank and Kendra arrive at the restaurant, and at first, Kendra doesn't seem to listen to her husband. But Hank's got some tricks up his sleeve still, and he pulls out a big, beautiful, yellow diamond friendship ring.

Kendra softens a bit. Still, she sticks to her guns — she has to know the truth.

Could this be it? Finally?

"I'm sorry, Kendra. I'm sorry that you were ever put in this situation. Kendra, I messed up. I made shit happen, and I'm sorry for all this," Hank says.

Wait, hold on. That wasn't it, was it?

For a brief moment, I believe there might actually be more coming — until Kendra grabs the ring and proposes that Hank move back in.

While the romantic part of me wants to be happy for them, the rational side of me says it's just too soon and there are far too many unanswered questions.

"Without the work, Kendra and Hank are bound to end up where they started and will likely break up," explains SheKnows Dating and Relationship Expert Andrea Syrtash. "Moreover, if Hank has fantasies to be with men, this should be confronted and explored."

If Kendra and Hank do take the time to sort through their issues, though, a lasting reconciliation is possible, says Syrtash.

"With open communication and work, it's possible for a couple to rebuild their relationship after an affair. In some cases, it can even bring the couple closer, because it shines a light on each person's needs and sometimes cultivates communication," she elaborated.

The key, for Kendra, will be in moving forward, not backward.

"Kendra can believe Hank and her marriage, but she shouldn't revert to old ways of avoidance," says Syrtash. "Things will never be the same, and the two need to keep building trust, respect and communication."

Unfortunately, they aren't taking the time and putting in the ground work. And that, says SheKnows' Parenting Expert Vera Sweeney, could spell impending doom — and potential heartbreak for the kids.

"Unfortunately for Little Hank, I can't see this family staying together much longer, even though it looks like they are moving in the right direction," she says.

"Hank will move back in while Kendra is still uncertain and unsteady. This will only lead to more arguments and unhappiness in front of their beautiful children. Even if it doesn't lead to an immediate split, it will lead to turmoil at home, which isn't healthy for anyone," Sweeney says.

Of course, whether Kendra and Hank will survive this remains to be seen — we certainly don't have a clear picture as Season 3 of Kendra on Top ends.

And even though I (like many viewers, I imagine) am a bit frustrated that Hank managed to stretch his avoidance of a confession till the end, I feel like — if nothing else — Kendra's final remarks prove that she is in a better place.

"For years, I always said I will never forgive anyone. I don't believe in second chance. You are who you are. I don't believe in mistakes," she says. "I can honestly say I've changed... I'm a believer now."

The flavors of this cinnamon pumpkin spice latte granola are not overpowering but enough to really make you go, "Wow, that's good!" It makes a fantastic gift, is wonderful over yogurt with fresh pears or apples or just eaten by the handful. Save your money at the coffee shop, and snack on this healthy treat instead.

Cinnamon pumpkin spice latte granola recipe

This homemade granola was inspired by my favorite seasonal coffee and infused with the flavors of pumpkin, cinnamon and coffee. This also makes a great gift when packaged in Mason jars or cute gift bags.

Serves 8

Prep time: 20 minutes | Bake time: 40 minutes | Inactive time: 1 hour | Total time: 2 hours

Ingredients: 

  • 2 cups gluten-free or regular rolled oats
  • 1/4 cup toasted pumpkin seeds
  • 1 tablespoon pumpkin pie seasoning
  • 1 packet instant coffee (I used 1 Starbucks VIA packet)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 1/2 cup pumpkin puree
  • 1/4 cup melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 1/4 cup pure maple syrup
  • 2 tablespoons coconut sugar or brown sugar

Directions:

  1. Preheat the oven to 350 degrees F, and line a large baking sheet with parchment paper.
  2. To a large bowl, add the oats, pumpkin seeds, coffee packet, cinnamon and salt. Using your hands, toss the oats to mix.
  3. To a separate bowl, add the pumpkin puree, coconut oil, vanilla, syrup and coconut sugar. Mix, and drizzle the wet ingredients on top of the dry oats.
  4. Mix the granola very well to ensure all the oats are evenly coated. Spread the oats in a single layer on the baking sheet, and bake for about 40 minutes, turning every 10 to 15 minutes so it doesn't burn.
  5. Remove the granola from the oven, and allow it to cool for 1 hour.
  6. Transfer to an airtight container for up to a week.

Supplies:

To create the floral centerpiece, grab a few wooden boxes and various sizes of small glasses. Use smaller and taller glasses like shot glasses and larger, shorter glasses like old baby food jars or small canning jars.

Instructions:

1. Arrange your glasses in the wooden boxes.

Make sure that there are enough in each box so that all of the glasses are touching another glass or the edge of the box so that if you move the box around the water won't spill out of the glasses.

Fill each glass with water and start arranging your florals!

3. Arrange the flowers

Cut tall floral stems for the center and smaller stems for the outside. Here we used small mums which come in bunches which made filling around the edges easy. Use a variety of florals such as store-bought mums, foraged leafy greens from a nature walk or whatever beautiful buds you have still sprouting in the garden. Assort the flowers within the glasses and the boxes until all the spaces are filled and your centerpiece is done!

Making the name cards

Save a few stems from your centerpiece off to the side for the floral name cards.

  • Paper (color that matches your place setting)
  • Hole punch
  • Paper cutter
  • Mini alphabet stamp set
  • Black stamp pad
  • Floral stems

Instructions:

1. Cut your paper

Start by cutting your paper down to a rectangular shape for the place card settings. Here we used 3.5 inches wide by 2.5 inches tall (big enough to stamp your letters at the bottom and run your stems across the top).

Once your rectangular shapes are cut, carefully stamp out the names of each guest on each of the place cards. If you need to, use a plastic ruler at the bottom of the card to keep your stamps lined up straight. Place these toward the bottom of the place card so that you have room on the top for the stems.

Once the names are on the place cards, use a hole punch to punch a hole in each corner (at a 45-degree angle).

4. Add flowers

Lastly thread the stems of a few florals through the top of each place card (here we used a purple mum and dried billy ball). Cut the ends of the stems to even them out then place on your table.

Helpful tips: Make your place cards proportionate to your plates and napkins. If you are using smaller plates, make smaller place cards and for large plates, make larger place cards. You are not stuck to the dimensions we listed here. Also get creative with your stamp set. Pick a modern or traditional stamp set based on your style (you can usually find the mini alphabet stamps in the $1 bin at your local craft store in a variety of fonts).

Curried mango chutney cheese ball is an exotic twist on a holiday classic

This cheese ball is full of so many unique flavors and textures in each bite. It does have a bit of a spicy kick, but it's not overpowering, and I think the hint of heat adds just the right balance to the sweet mango. You can serve this cheese ball with any fresh cut vegetables or just about any cracker you have on hand or that you love. Even tortilla chips would work here. To save even more time, you can prepare this recipe a few days or so ahead of time and just coat it in the pumpkin seeds before serving.

Curried mango chutney cheese ball recipe

Softened cream cheese is combined with fresh mango, mango chutney and spices, then rolled in toasted pumpkin seeds for a delicious, unique spin on a cheese ball. Serve with crackers, veggies or even chips.

Adapted from Mango & Tomato

Serves 12

Prep time: 10 minutes | Inactive time: 3 hours | Total time: 3 hours 10 minutes

Ingredients:

  • 16 ounces cream cheese, softened to room temperature
  • 1/2 cup freshly grated Parmesan or Asiago cheese
  • 1 cup extra-sharp white cheddar cheese
  • 1/2 cup medjool dates, finely chopped
  • 1/4 cup thinly sliced green onions
  • 1/4 cup fresh mango, finely diced
  • 1/4 good-quality mango chutney
  • 1 tablespoon curry powder
  • Salt and pepper, to taste
  • 1 cup toasted pumpkin seeds, for coating the cheese ball

Directions:

  1. In a large mixing bowl, combine all the ingredients for the cheese ball except for the pumpkin seeds.
  2. Using a hand mixer or a sturdy spatula or spoon, mix all the ingredients very well.
  3. Scoop the mixture into the center of a large piece of plastic wrap, and form into a ball.
  4. Cover the cheese ball completely in the plastic wrap, and refrigerate for several hours to allow the cheese ball to firm up.
  5. Before serving, remove the cheese ball from the plastic wrap.
  6. Place the pumpkin seeds into a small bowl, and roll the cheese ball in the bowl, coating all sides with seeds.
  7. Place the cheese ball onto a serving plate along with any assorted crackers you have on hand and/or fresh vegetables, such as peppers, celery or cucumbers, for serving.

But I recently gave grits another shot, though I went the savory route. So. Much. Better.

This breakfast concoction has mashed sweet potatoes and goat cheese mixed in and is topped with a runny fried egg. Way better than anything you'll find in the pancake house.

These savory grits are perfect for breakfast, come together in 15 minutes and are filled with sweet potatoes and goat cheese.

Serves 2

Prep time: 5 minutes | Cook time: 10 minutes | Total time: 15 minutes

Ingredients:

  • 1 cup water
  • 1 cup milk
  • 1/2 cup grits
  • Salt and pepper
  • 1/2 cup mashed sweet potatoes
  • 2 ounces goat cheese
  • 2 eggs
  • Chopped green onions, for garnish

Directions:

  1. In a small saucepot, bring the water and milk to a boil.
  2. Once the water and milk are boiling, add the grits to the pot, and lower the heat to medium-low. Stir frequently until thickened.
  3. Season with salt and pepper, then add the goat cheese and sweet potatoes, and continue stirring until the cheese has melted and sweet potatoes are incorporated. Turn off the heat, and set the pot aside.
  4. Heat a small greased skillet over medium heat. Add the eggs once the skillet is hot, and fry.
  5. Spoon the grits into 2 bowls, top each with a fried egg, and garnish with the green onions.

Slow Cooker Sunday: Easy, healthy vegetarian quinoa enchiladas

As it continues to get colder outside, cooking in my slow cooker is a must. It makes my whole home smell wonderful and has a very comforting feel to it. Lots of times meals made in the slow cooker are heavy or more comfort food based. However, this dish is comforting but not a heavy meal at all. It's packed with vegetables and a good-for-you grain — quinoa. It's also a vegetarian dish, but trust me, you will not miss the meat.

If you aren't a vegetarian and want to add some meat, then you need to cook the meat separately and add it to the finished mixture. I would suggest making chicken, but I'm sure other meats would do well with this flavor combination. You can also make this dish as spicy or as mild as you want. To make it spicier, use a hotter enchilada sauce and more seasonings. To make it more mild, use a less spicy enchilada sauce and fewer seasonings. It is definitely an adaptable meal as far as the flavors go.

Feel free to substitute some of the vegetables for similar types of vegetables, as long as you keep the quantities about the same. Some other vegetable ideas include onions, different beans, green bell pepper, fresh tomatoes, chopped squash, peas or broccoli.

You won't miss the meat in these hearty vegetarian quinoa enchiladas. And the best part is, the slow cooker does all the work for you for this easy meal.

Serves 4

Prep time: 15 minutes | Cook time: 3 hours | Total time: 3 hours 15 minutes

Ingredients:

  • 1 cup quinoa, uncooked and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 2 (10 ounce) cans diced tomatoes, undrained
  • 1 (12 ounce) can milk enchilada sauce
  • 2 cups tomato broth
  • 1 large sweet bell pepper, chopped (I used an orange one)
  • 3 tablespoons enchilada spice mix
  • 2 cups cheddar cheese
  • 8 tortillas
  • 2 cups mild salsa
  • Sour cream (optional)
  • Fresh lime (optional)
  • Green onions (optional)

Directions:

  1. Generously spray a slow cooker.
  2. Add in the quinoa, black beans, corn, undrained tomatoes, enchilada sauce, chopped bell pepper and tomato broth.
  3. Stir together, and add in the enchilada spice mix.
  4. Cover with the lid, and cook on high for 2 to 3 hours or until all the liquid has evaporated.
  5. Stir everything together.
  6. Evenly disperse the mixture among 8 tortillas. Top each tortilla with some cheese, and roll them up. The cheese will melt from the hot quinoa mixture.
  7. Top each enchilada with some salsa and some more cheese.
  8. If desired, top with sour cream, a lime wedge and some chopped green onions.

SPOILERS: The Newsroom finale points to death and incarceration

Despite what some of The Newsroom's critics have to say, we think the show is bursting at the seams with lovable characters, all brilliantly sarcastic, enviably cerebral, wholeheartedly dedicated to their jobs and packing some uniquely individual charm and wit. Even characters we weren't all that fond of to begin with grew on us (paging Season 1's Don Keefer).

But atop that seemingly never-ending pile of characters we've become quite attached to sits one character who we'll be particularly distraught to bid goodbye in only a few short episodes. For a character who wasn't even present in the pilot episode, Sloan Sabbith certainly has wormed her way into our hearts, none more so than my own.

5 Reasons we're crushed about The Newsroom's third, final season

Always whip-smart (every time she opens her mouth to talk about the Dow or something else finance-y, her obvious level of intelligence makes me question why I have yet to make the very natural leap to the world of corporate finance; Wall Street is practically begging me to get in there and sort stuff out), hilariously awkward and endearingly blunt, Sloan Sabbith is creeping up on C.J. Cregg as my fictional professional idol (Kirk from Gilmore Girls is sitting in third place, for those who are desperate to know). If you ask me (and even though you didn't, I'm going to tell you anyway), Sloan's most admired quality is that she has that elusive combination we've all been striving for: being super-cool and a total nerd all at the same time.

Whether she's kicking a guy in the groin, sparring with Charlie, taking the bull Don by the horns face, anchoring special news coverage or not giving Neal a choice about adhering to her every request, Sloan is a total boss who delivers a zinger with such trademark spice, Tabasco should look into bottling it.
