These fall-flavored pumpkin waffles are the most decadent breakfast ever

These waffles are the perfect example. Not only are they made with pumpkin and apple, but they are layered with creamy mascarpone cheese and then topped with a hearty spoonful of bourbon caramel. Perfect for those super-indulgent fall weekends.

Caramel apple pumpkin and bourbon mascarpone waffles recipe

Serves 4

Prep time: 8 minutes | Cook time: 10 minutes | Total time: 18 minutes

Ingredients:

For the waffles

  • 1/2 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 3/4 cup milk
  • 1/4 cup apple cider
  • 1/2 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1 tablespoon unsweetened applesauce
  • 1 large egg, beaten

For the apple topping

  • 1 tablespoon butter
  • 1 large apple, chopped
  • 1/4 cup brown sugar
  • 1-1/2 tablespoons water
  • 3/4 teaspoon cinnamon

For the bourbon caramel

  • 1/2 cup brown sugar
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 1/2 tablespoon bourbon

For the layers of filling

  • 1/2 cup mascarpone cheese
  • 1/4 cup heavy cream
  • 3 tablespoons sugar
  • 1 teaspoon vanilla

Directions: 

  1. Preheat a waffle iron to medium heat. Spray with nonstick cooking spray.
  2. In a large bowl, whisk together the flours, baking powder and pumpkin pie spice. Make a well in the center of the flour mixture, and add in the milk, apple cider, pumpkin puree, brown sugar, applesauce and egg. Mix to combine.
  3. Scoop the waffle batter into the waffle maker (1/2 cup at a time), and cook for about 3 to 5 minutes or until golden brown.
  4. To make the apple topping, in a saucepan over medium heat, melt the butter. Add the chopped apples, brown sugar, water and cinnamon. Reduce the heat to low, and cook until softened and browned, about 12 minutes.
  5. To make the caramel sauce, to a saucepan over medium heat, add the brown sugar, heavy cream and butter, whisking constantly for about 5 minutes or until thick. Add in the bourbon, and whisk some more.
  6. To make the filling, whisk together the mascarpone cheese, heavy cream, sugar and vanilla until the mixture is thick and fluffy.
  7. To serve, stack a hefty spoonful of mascarpone whipped cream over 1 waffle, and stack with another waffle. Add more cheese to the top of the second waffle, and garnish with the soft apple topping and oozing caramel sauce.

Jessa Duggar compares abortion to the Holocaust

Jill Duggar and her new husband, Derick Dillard, recently announced that they are branching out and starting a family of their own and, now, they are excited to reveal the sex of their impending arrival.

The Dillards didn't come straight out and tell the rest of the family, though. They made a good-old wholesome guessing game out of the baby's sex in true Duggar style. Joy-Anna, James, Jennifer and even the happy parents-to-be themselves got in on the fun before the big revelation.

Derick and Jill, who have nicknamed their son "baby Dilly," are ecstatic to add to the Duggar brood, but they won't be keeping with a major tradition in the family that helped decide on Jill and her 18 other siblings' names. "We're not doing a letter theme," said Jill. "But we may do some kind of theme, like family names."

Staying away from letter names is probably in the Dillards' best interest, considering it's hard to come up with nearly 20 names that start with the same letter and Jill already has some pressure to have as many children as her mother. Matriarch, Michelle Duggar, recently said that she misses the pitter-patter of little feet and is counting on all 19 of her children to have 19 of their own offspring. Um, that's 361 grandchildren and one heck of a Christmas shopping list.

Jill and Derick were married in June and they claim that Jill received her first kiss after her walk down the aisle. Hand-holding did not even commence between the two until they were officially engaged, because of their devout Christian beliefs. "I think it is safer and makes it more special to wait to kiss until your wedding day," 23-year-old Jill recently told People magazine. "To save the physical side of your marriage for your wedding day and not going further than you should — we want to have no regrets."

Matthew McConaughey's new gig? College cheerleader (VIDEO)

McConaughey opened up to GQ for their November issue, explaining how he became a fan of the Washington, D.C. team — and the reason is what you might expect from a 4-year-old football fan.

"Two things. First: 4 years old, watching Westerns, I always rooted for the Indians," he said, according to USA Today. "Second, my favorite food was hamburgers. The Redskins had a linebacker named Chris Hanburger.

"When you're 4 years old, that's all it takes."

The Washington Redskins have been defending their name and logo for at least a few years now, with many people calling it racist. President Obama even spoke up on the issue, telling the Associated Press, "If I were the owner of the team and I knew that there was a name of my team — even if it had a storied history — that was offending a sizeable group of people, I'd think about changing it."

Federal Communications Commission chairman, Tom Wheeler, also commented, saying the name is "offensive and derogatory."

But Lincoln's new spokesperson doesn't seem to understand why this is suddenly an issue.

"Man, it’s twofold. What interests me is how quickly it got pushed into the social consciousness," McConaughey explained. "We were all fine with it since the 1930s, and all of a sudden we go, 'No, gotta change it'? It seems like when the first levee breaks, everybody gets on board."

He continued, "I know a lot of Native Americans don't have a problem with it, but they're not going to say, 'No, we really want the name.' That's not how they're going to use their pulpit. It's like my feeling about gun control: 'I get it. You have the right to have guns. But look, let's forget that right. Let's forget the pleasure you get safely on your range, because it's in the wrong hands in other places.'"

Stop calling motherhood a job

Most tired, frazzled, stressed-out moms are comforted by this platitude: Being a mom is the toughest job in the world. I understand this saying, but I don't agree with it. Yes, on my very worst days — where my kids whine nonstop and torture me from nap time till bedtime — this cliché makes me feel better. If motherhood really is the world's toughest job, that must be why I had such a terrible day. It's a hard job, but somebody has to do it.

But still, the more I think about this saying, the more I don't like it. Even though ads have been made to celebrate the "world's toughest job," and detailed infographics have been produced with an actual motherhood salary breakdown, mothers shouldn't be so quick to jump on board.

Being a mother is really, ridiculously hard on some days, and so is being a father. It's called being a parent. But when Salary.com breaks down a stay-at-home mom's worth based on 96.5 hours of work per week, including job descriptions like day care teacher, van driver, laundry operator, computer operator and CEO, it comes off as patronizing to those professions. Though a salary chart like this is supposed to be cute and encouraging, a mother is not a psychologist or CEO. She is a mother.

Motherhood is a relationship. I understand that it is encouraging to tell moms that they are doing the hardest job in the world, but I also think it is misleading. When you begin to see motherhood as a job, you stop viewing it as a relationship. I know that personally this attitude makes me frustrated because I wonder why I don't get promotions, raises, breaks, sick days, better benefits, etc. If motherhood was a job, we would have all quit by now.

I knew exactly what I was getting into when I became a mother, and 90 percent of the time I love it. Everyone has her bad days, of course. But when my kids are shrieking and clinging to my legs with snot on their faces, the only thing that gets me through is the fact that I have a long-lasting commitment to them. I don't take care of them because it's my job.

7th Heaven dad in deep trouble after shocking confession

Timberlake didn't take too kindly to an article claiming that he had very publicly stepped out on his gorgeous wife, Jessica Biel, and he wasn't about to take the assault on his marriage sitting down.

Paris' Heat magazine published a piece with the headlines, "Justin Timberlake gets flirty with another woman, It is not his wife!" and "The flirty photos that rocked Justin and Jessica's marriage," obviously alleging that Timberlake was treating his union less than respectfully. The tabloid also featured quotes that were supposedly from Biel, backing up the cheating rumors. Timberlake swiftly filed a defamation claim against the magazine's publisher, Bauer Media Group, which quickly offered a financial settlement and an apology to Timberlake and Biel, according to Entertainment Tonight.

"The article was based on an unfounded report regarding Justin Timberlake's alleged behavior at a club following a performance in Paris, to celebrate a birthday and also included a number of purported statements improperly attributed to Jessica Biel, which Heat now understands had never been made by her," the media group's apology says, according to ET. "The Defendant accepts that the article was false and withdraws any inferences that questioned the state of Justin and Jessica's marriage. The Defendant regrets any embarrassment caused to the couple and unreservedly apologizes to them."

Timberlake and Biel's people, in turn, released a statement on their behalf, revealing the couple's pleasure with the outcome and also issuing a warning against anyone else who dares to print false gossip about them. "Justin Timberlake and Jessica Biel are very satisfied with this categoric retraction of what was a false and unfounded story," their lawyers said in a statement. "The couple will not be making any further comment in relation to this matter, but will not hesitate to take similar legal action if false allegations regarding the state of their marriage are repeated."

Timberlake and Biel are just the latest celebs who have joined in fighting the media to keep control of their own images and private lives. Russell Brand was awarded substantial damages after filing a libel suit against British tabloid, the Sun, which published an article claiming Brand had cheated on his girlfriend at the time, Jemima Khan. Angelina Jolie and Brad Pitt sued another tabloid for writing an article claiming they were divorcing and Kristen Bell has helmed the #NoKidsPolicy, aimed at protecting the privacy of children of celebrities.

Although Swift has accepted the normal part of her life is gone, she still looks to any other pieces of normalcy to keep her going. She said that no matter what anyone says, she really does date like normal people.

"Every single person who interviewed me, I mean every single one — and this is true of the red carpet here tonight, Elle — asked me, 'How do you balance work and family?' and he said the only thing that people asked him repeatedly was about the t**s on the 'Blurred Lines' girl [Affleck's Gone Girl costar, Emily Ratajkowski], which, for the record if we're talking about them, they are real and they are fabulous. Garner obviously loves her family, but so does Ben Affleck, and she has a hard time understanding why that should be any different. She said, "As for work-life balance, he said no one asked him about it that day. As a matter of fact, no one had ever asked him about it. And we do share the same family. Isn't it time to kinda change that conversation?"

Good thing 19 Kids and Counting stars and parents-to-be, Jill Duggar and Derick Dillard, have a registry, because what they're asking for is not what you'd expect.

The newlywed couple's gift registry, created at their local Walmart, contains a handful of splurges, but mostly everyday items. Some of the more surprising requests? An eight-pack of orange Gatorade and no fewer than three kinds of diaper rash ointments, including Boudreaux's Butt Paste.

Beyond that, though, it's a pretty practical registry, full of items like Purell hand sanitizer, bottles, baby oil, dish detergent, paper towels and a lot of diapers.

The most expensive items on the registry are a Baby Trend jogging stroller for $199, a Graco portable changing station for $159 and a convertible car seat and baby swing, each for about $140. Almost everything on the list of requests is under $50 and, according to the registry, 64 items have already been purchased with 152 days left until Duggar's due date.

Another interesting request: Canciones de Cuna, a book of Spanish lullabies. Looks like the Dillards are going for a bilingual baby.

"We are so excited for this new little blessing and look forward to the arrival of 'Baby Dilly' in March 2015!" the couple writes on their registry.

Duggar and Dillard just announced that they're expecting a little boy in an adorable video of their family — and themselves — taking guesses as to what the gender would be. They haven't picked a name and say they're probably going to stay away from the Duggar family tradition of letter-themed names. Rumors are already flying that the little boy will be named after his grandpa, Jill's dad, Jim Bob.

She explained, "But I was always adventurous. And anything that felt too feminine and girly, like 'don't get up because you have this beautiful dress. And I don't want you to mess up the dress.' I would look at my mom, like, come on now. What's the point of bringing me into a kiddie birthday to put me in a dress and tell me I can't play with the kids. Are you out of your mind? I would take off the dress, give it to my mom and go run around in my panties."

According to E! News, that led to a childhood of female friends who didn't understand her and, eventually, women around her who treated her badly.

"It was really hard. Because I love women. There was for a long time in my life when I was younger, I sort of gave up on trying to find female friends," Saldana explained. "Because girls can sometimes be a little too mean with each other. And I don't know where it comes from, as opposed to us uniting, we tend to pick each other apart. It was very, very difficult. I remember my mom always stood by us."

But through it all, the Guardians of the Galaxy actress had her mother, who helped her see that the bullies may have had it worse than she did.

Django actress Danielle Watts mistaken for a prostitute

According to the Los Angeles City Attorney's office, the couple's arraignments are scheduled for Nov. 13. Watts and her boyfriend, Brian James Lucas, could each face up to six months in jail and $1,000 in fines if convicted.

Watts was detained by police on Sept. 11 and she took to her Facebook page soon after to allege racism and misconduct by the Studio City police.

Rolling Stone calls the Kardashians repugnant and egotistical

Paul Reubens, the man behind Pee-wee Herman, announced during an interview with Rolling Stone that a third movie wasn't just in the works, they were going to make the movie shortly after the new year.

"There's going to be a big announcement any minute now," Reubens told the magazine.

The actor even said the beloved children's character is coming back imminently.

"It's been months and months of being right on the verge of being announced... I thought something was going to go public yesterday, actually, and that you'd be the first person I'd be talking about this with," Reubens explained to Rolling Stone. "But I'm thinking there will be something made public very soon... I wish I could tell you about it right now, because, I mean, it's amazing. It's going to be amazing. I think it first got leaked four years ago or so that the movie was going to be made, and ever since then it's just been stalling and stalling. So I'm really ready for this to happen. But I'm not kidding: It's very imminent."

Of course, it was previously believed that Pee-wee Herman and his adventures were done for good after Reubens was caught for indecent exposure at an adult XXX theater back in 1991.

Since the incident, things have been slow for Reubens, though he has continuously teased the return of the children's classic character he created.

2011 seemed to be the year that proved people wanted more Pee-wee. A limited stage run production in Los Angeles and New York proved to be a surprising success. The show was nominated for a Primetime Emmy Award and received an extra performance that was recorded for HBO.

We just hope this time, when Reubens says the movie is coming, he means business.

Wait, what? Kim Kardashian gets trumped by her sister

Rumors have been coming fast ever since rapper, Tyga, who is eight years older than 17-year-old Kylie, partied with the youngest Jenner at her birthday party. They were also spotted hanging out at Universal Studios' Hollywood Halloween Horror Nights and on what looked like a romantic date to a Japanese restaurant in Los Angeles.

But according to Kris, the rumors aren't quite true.

"Kylie isn't dating anybody," Kris said during a Tuesday morning interview on On Air with Ryan Seacrest. "[Tyga is part of] this whole little group of kids who have been around forever — and I call them kids because relatively speaking, they kind of all travel as a pack and they enjoy each other's company."

And it certainly looks like that's the case. Tyga was at Kim Kardashian's wedding with his on-again, off-again girlfriend — and baby mama — Blac Chyna, and he apparently lives right next door to Khloé Kardashian.

"We all live in the same neighborhood," Kris continued in her interview. "[Tyga] used to live across the street for a long time and now he lives next door to Khloé. Khloé and Kourtney just moved in up the street, so we have all of us four and Scott and all the kids are in the same neighborhood, which is really wonderful because all the cousins get to grow up together. Little Miss Kendall moved across town, Kylie lives upstairs, Rob lives with Khloé. So I've kind of got tabs on it right now and it's kind of exciting."

Tyga, whose real name is Michael Ray Nguyen-Stevenson, has denied the dating rumors, too, especially after taking some flak online for reportedly dating someone who is still a legal minor. Sources said they were dating, but not physical, but Tyga denied that on his Twitter, telling his followers not to believe "the rumors."

Barbara Walters and ABC News confirmed on Tuesday that the legendary host will be returning for one more year of the TV special, Most Fascinating People, despite previously marketing last year's show as the last.

ABC must have made Walters an offer she couldn't refuse. Either that or Walters is just not very good at retirement at all. Not that we blame the network or Walters, for that matter. We can't possibly imagine anyone stepping into her shoes.

Neil Patrick Harris, Chelsea Handler, Scarlett Johansson and Oprah Winfrey have already been announced on the 2014 list, which Walters confirmed in her statement informing everyone of her return to the program.

The hangries is a mixed emotion of hungry and angry. Or really, it's just that I'm so hungry I start to get angry and super cranky. This means I need to eat lunch fast. Luckily this simple soba noodle dish always hits the spot.

This delicious dish is packed full of soba noodles, meaty shiitake mushrooms, mixed frozen vegetables and lots of fresh chopped kale. The best thing about this dish is that it's ready in just 20 minutes. From starving to full in just 20 minutes... You cannot beat that.

Spicy soba noodles with kale and shiitake mushrooms recipe

This healthy noodle dish is packed full of buckwheat soba noodles and lots of vegetables and shiitake mushrooms. A light soy sauce, ginger and garlic mixture adds a punch of flavor to this simple, superfast dish.

Serves 2-4

Prep time: 5 minutes | Cook time: 15 minutes | Total time: 20 minutes

Ingredients:

  • 6 ounces soba noodles
  • 2 tablespoons olive oil
  • 1 cup shiitake mushrooms, stems removed, sliced
  • 1 cup mixed frozen vegetables (mine included bell peppers, carrots, lima beans and onions)
  • 1/4 cup low-sodium soy sauce
  • 2 garlic cloves, minced
  • 2 teaspoons Sriracha sauce (more if desired)
  • 2 teaspoons grated fresh ginger
  • 1/3 cup vegetable stock
  • 1 cup chopped curly kale
  • 1/3 cup shaved fresh carrots

Directions:

  1. Cook the soba noodles according to the bag directions, and set side until ready to use.
  2. To a large skillet set over medium-high heat, add the olive oil. Once the oil is hot, add in the mushrooms and frozen vegetables.
  3. Sauté until the vegetables just start to soften.
  4. Add in the soy sauce, garlic, Sriracha sauce and ginger. Cook until the liquid just starts to cook down.
  5. Add in the vegetable stock and kale. Cook for 5 minutes, until the kale starts to wilt.
  6. Add in the soba noodles, and toss to combine.
  7. Serve with a sprinkling of fresh grated carrots for crunch.

Mom leads cops on a high-speed chase with her baby in the car

33-year-old Georgia mom Jamila Jones had her 1-year-old son and the father of the child in the van with her when she fled both New Mexico and Texas State Police. New Mexico State Police reported her driving as fast as 120 mph in a van.

New Mexico State Police enlisted the help of Texas officers, who joined in the chase as Jones raced toward the state line. Eventually, officers were able to stop her using tire-deflation devices made specifically for high-speed pursuits.

Ramses Copeland, the father of her son, was released along with the child after reporting to officers that he asked Jones to stop for the pursuing police. After putting her son in immense danger by driving at reckless speeds to evade the police, Jones has been charged with child abuse. She also faces charges for fleeing law enforcement and possession of drug paraphernalia. She's currently behind bars and will be charged in both New Mexico and Texas.

This ranks right up there with the Florida mom who hid her infant in the trunk of her car to try to avoid getting a ticket. When faced with arrest, it's a parent's duty to put the well being of a child above all instincts to flee. Jones didn't have enough sense to drive even remotely safely with a baby in the car, and the child abuse charges are absolutely justified. It's awful to see a family broken up, especially when young children are involved, but it sounds like Jones needs some major rehabilitation before she's fit to care for her son. Hopefully Copeland is a capable parent. The little boy deserves love and care, especially after such a scary incident.

Triple chocolate witch cupcakes are fun for the whole family

To make your witch cupcakes, start off with a sugar cone and some melted chocolate. If you want, you can buy cones that are already chocolate, but I absolutely love the taste and flavor of a chocolate-dipped cone. It becomes the highlight of these cupcakes — besides, of course, how cute that angry little witch looks.

To melt the chocolate, combine chocolate chips and a little bit of vegetable oil in a microwave-safe bowl. Microwave the chocolate in bursts of 30 seconds, stirring for about 20 seconds between each burst.

Once the chocolate is melted, dip the cone into the melted chocolate, and shake off the excess. Place the dipped cone onto some parchment paper, and allow the chocolate to dry. For a faster dry, place the cones onto a parchment-lined tray, and put the tray in the fridge until the chocolate has completely hardened.

While the cones are drying, bake the cupcakes, and allow them to cool. Once the cupcakes are cooled, top them with a huge spoonful of green-dyed frosting.

I just used frosting from a container that I squirted some food dye into. You want there to be a lot of frosting to work with, so pile it high. Using a butter knife, smooth and spread the frosting to form a round, headlike shape. This will be the witch's "head."

And now it's time to decorate the cupcake to make it look like a witch. Start with pressing a candy corn into the cupcake. Place the candy corn just a little bit above the cupcake wrapper. Then press in 2 miniature chocolate chips above the candy corn to form eyes.

Now it's time to add some personality to the witches with some "angry eyebrows." The eyebrows are just black licorice that have been cut small with scissors. Position them right above the eyes like in the picture for the "angry" effect.

Make the hair using the same black licorice string and cutting it into pieces. I like cutting it into different sizes to give the witch a more scraggly look.

You can make the pieces all the same length, if desired, or go even more scraggly than the example above. Press the hair pieces into the wet frosting to hold.

Take the dried chocolate cone, pipe some more melted chocolate along the opening, and attach it to a fudge cookie. Press the cookie and cone "hat" onto the still-wet frosting. Press it so that it holds, but not too hard to deform the witch's face.

These cute witch-decorated cupcakes have three different types of chocolate layers, making for one decadent treat. These cupcakes are fun to decorate and don't take too long to have ready for a Halloween party.

Yields 24

Prep time: 40 minutes | Bake time: 25 minutes I Total time: 1 hour 5 minutes

Ingredients:

  • 1 box chocolate fudge cake mix plus the ingredients called for
  • 1 container vanilla frosting
  • Green food coloring
  • 24 chocolate fudge cookies (I used Keebler Fudge Stripes Dark Chocolate cookies)
  • 2 (12 count) packages sugar cones
  • 1 cup milk chocolate chips
  • 1 teaspoon vegetable oil
  • 24 candy corns
  • 48 miniature chocolate chips
  • 1 package black licorice string

Directions:

  1. Prepare the cupcakes according to the package directions. Bake, and allow to completely cool.
  2. Combine the frosting and green food coloring, mixing until a rich green color has formed.
  3. Meanwhile, remove the sugar cones from the package.
  4. In a small microwave-safe bowl, combine the chocolate and vegetable oil. Microwave in bursts of 30 seconds, stirring in between.
  5. Dip the cones into the melted chocolate, and shake off any excess. Place the cones onto a parchment-lined tray, and allow them to completely dry.
  6. Generously frost the cupcakes with a lot of frosting to form an even, round "head" for the witch.
  7. Press a candy corn into the cupcake right above the cupcake wrapper. Place 2 miniature chocolate chips above the candy corn.
  8. Cut some black licorice into small pieces to make "angry eyebrows." Cut more licorice strips to make hair, and press them into the wet frosting.
  9. Place the fudge cookie on top of the head, and press it into the frosting to secure it. Place some more melted chocolate around the opening of the cone to attach it to the cookie.
  10. Allow to completely dry, and then enjoy.
