Broccoli cheddar brown rice bake with biscuit crust recipe

This casserole uses fresh broccoli, cooked brown rice and a homemade cheese sauce that really helps the dish stay creamy and rich. Notice I used Greek yogurt in place of sour cream in the sauce. Honestly, I very rarely use sour cream and almost always use plain Greek yogurt. It adds lots of creaminess without the added calories and gives this recipe an extra punch of protein.

Broccoli, cheddar and brown rice bake with biscuit crust recipe

This simple yet satisfying casserole is an easy go-to family meal for the busy workweek. Prepare this casserole ahead of time, and pop it into the oven before dinnertime rolls around.

Serves 6

Prep time: 20 minutes | Bake time: 25 minutes | Inactive time: 5 minutes | Total time: 50 minutes

Ingredients:

For the cheese sauce

  • 1 shallot, minced
  • 1 small sweet onion, diced
  • 1 tablespoon unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup plain Greek yogurt or sour cream
  • 1 cup low-fat milk
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper, to taste

For the casserole

  • 1 small head broccoli, finely chopped
  • 2 tablespoons unsalted butter
  • 3 cups cooked brown rice
For the biscuit topping
  • 1-1/2 cups biscuit mix
  • 1/2 buttermilk
  • Parsley, for garnish (optional)

Directions:

  1. Preheat the oven to 350 degrees F, and spray a medium-size casserole dish with nonstick cooking spray.
  2. To a saucepot over medium heat, add the shallots, onions and butter, and cook until the shallots and onions are soft, about 4 to 5 minutes.
  3. Whisk in the flour, and stir until it absorbs all the butter. Add in the Greek yogurt (or sour cream), continuing to stir until the yogurt and flour are well incorporated.
  4. Finally, add the milk and shredded cheese, and season with salt and pepper, if desired. Stir well, and simmer for 10 minutes or until the sauce thickens.
  5. Add the broccoli and cooked rice, and stir well. Pour the mixture into the casserole dish, and set it aside.
  6. In a mixing bowl, combine the biscuit mix and buttermilk. Mix well until a stiff dough forms, and turn out onto a floured surface.
  7. Roll the dough to about 1/2 inch in thickness. Using a biscuit cutter, cut the desired size of biscuits from the dough.
  8. Top the casserole with the biscuits, and bake uncovered for 25 minutes or until the biscuits are nicely golden brown.
  9. Remove from the oven, and allow the casserole to stand for 5 minutes. Garnish with fresh parsley if desired, then spoon the casserole into serving bowls or plates, and serve immediately.

"It would be so fun for people if we were," de Rossi said about the baby chatter. "They want us to have a baby," DeGeneres replied.

"There's a magazine... that says, 'They're finally starting a family.' Like, are people really that mad at us?" asked de Rossi. "So, no."

"No, we're not going to have a baby?" asked DeGeneres. "No, we're not," answered de Rossi. "OK. Good for me to know now," said DeGeneres.

"It's so prevalent that everyone assumes that we really are having a baby and we're just not sharing it," added DeGeneres. "So, we might be having a baby. We're just not sharing it. But we're not having a baby. Or are we? No, we're not."

Though DeGeneres is playing coy, it seems like there's a good chance the baby rumors are just that: rumors. But would it really be that far-fetched if they were expecting? So many celebrities have been able to keep their pregnancies secret for a very long time lately.

DeGeneres and de Rossi could be taking a page out of the Ryan Gosling/Eva Mendes playbook. The extremely high-profile duo went into hiding this year and managed to keep Mendes' pregnancy under wraps until the actress was in her third trimester and didn't ever publicly confirm that Mendes was indeed pregnant.

Mila Kunis and Ashton Kutcher also kept the public in the dark about their impending bundle of joy this year. "We were actually able to hide it for a long time," Kunis said to DeGeneres in May, when she finally confirmed that she was expecting. "I know, it's amazing."

But the award for best-kept baby secret goes to the one-and-only Zach Galifianakis. The funnyman and his wife, Quinn Lundberg, we're able to keep their baby's name and gender under wraps for a whole year. "We don't want to find out until it's 16," Galifianakis joked when Jimmy Fallon asked about the baby's sex this week. "We just call it 'It' for now. No, we haven't named it yet. It has a number right now... it's a boy! I think fatherhood is just the greatest thing. It really is."

"People are being beheaded in countries right now because of their beliefs or sexual orientations," Cumberbatch explained, according to E! News. "It's terrifying. It's medieval — a beheading! I'd take up arms against someone who was telling me I had to believe in what they believed or they would kill me. I would fight them. I would fight them to the death. And, I believe, the older you get, you have to have an idea of what's right or wrong. You can't have unilateral tolerance. You have to have a point where you go, 'Well, religious fundamentalism is wrong.'"

The actor said he would fight "to the death" for the cause. And although he said it has been a struggle for gay people across the world, that fight remains in places you wouldn’t imagine — like Hollywood.

"I think if you're going to sell yourself as a leading man in Hollywood to say 'I'm gay,' sadly, is still a huge obstacle," he explained. "We all know actors who are [gay] who don't want to talk about it or bring it up, or who deny it. I don't really know what they do to deal with it."

He added, "Human rights movements and sexual and gay rights movements have made huge social progress in the last 40 years, without a doubt, but there's a lot more work to be done. I have frequently resented my role as a single mom — not the child, but the loneliness — however, I'm incredibly thankful that single motherhood taught me not to tolerate laziness cast as a twisted version of a perfect childhood.

Single moms don't have the luxury of believing we can give our kids a perfect childhood. We lost that fantasy when our dreams of a happy marriage vaporized. And while it feels tragic to face the reality of brokenness head on, I firmly believe there is something freeing about giving up our supposed control over perfection.

When I was still married, I drove myself crazy trying to stay one step ahead of brokenness. I carted around my child as we visited parks, museums and Whole Foods. Heaven forbid we stay in the house for an entire day, and work on mopping the floors or cleaning the dishes together. I want to give her happiness, I thought. I want to give her perfect childhood memories and the chance to be a kid while she can.

The luxury of fantasy disappeared when my husband left. We no longer had the money — not that we really did before — for organic restaurants and day trips to the museum. What's more, I no longer had the time to create my version of perfect childhood memories. Day trips turned into nights in the house, where we had no choice but to face the dirty dishes together. Even harder to admit, I needed my daughter's help to care for our home. I needed her to pick up after herself, to keep her room tidy and to help sweep the floors.

When we were still new to our joint housekeeping endeavors, I asked my daughter to pick up her puzzles one day. She retorted, "Mom, that's your job," to which I was able to respond with freedom, "No, kiddo, I have two jobs. Now get after it and pull your weight around here."

In that moment, I realized that giving my child a sense of responsibility, agency and cooperation is a vital part of giving her a good childhood. I may have missed out on giving her perfection, but perfection has never been measured in the number of hours spent running around in a children's museum rather than scrubbing a dirty floor.

Perfection, moreover, isn't measured by straight-up laziness. Housekeeping is not my job. It's the job of everyone who comprises a family, including tiny children. When I became a single mom, I finally allowed myself to believe it.

However, months later, it looks like Cowell is ready for Eric to grow up. He told Hello! magazine, "I'm going to be honest — I'm not exactly a hands-on dad. I want to fast forward a few years so I can take him go-karting and then introduce him to women."

However, Cowell still sees himself as a great dad and he is happy he is able to do whatever his son needs. According to People, he explained that becoming a dad at 55 may be the best time to do it.

"I'm probably in a far better position to be a father now than I would have been 10 years ago," Cowell added. "That's the way I'd look at it. And at the end of the day we have really great nannies that are bloody amazing, so I don't have to worry."

The former X Factor and American Idol judge seems to have a new focus in life and he said he would consider having more kids in the future. Although he and baby mama, Lauren Silverman, aren't married, Cowell said he has considered it.

"I've never said 'no' to marriage, but then again, I couldn't imagine having a kid at one point and now look at me."

At 17 years old, Kylie hasn't just been sitting around on her bum and reaping the rewards of her family's successes. She's penned a novel, made modeling appearances and serves as the face of a Steve Madden shoe collection alongside Kendall. Kylie also started her own line of hair extensions, called Kylie Hair Kouture. The extensions line stemmed from the massive popularity of the blue hair color Kylie donned at sister Kim's wedding in May.

Wilson recognizes sleeping with anyone you work with, but especially your boss, is a big risk. "It was a roll of the dice, but so is love," she says. "And if you think you have a chance at real love, I say roll 'em.

"So, yes. I slept with my boss, but I also married him. So that makes me his boss. Destiny fulfilled."

The Real Housewives of New Jersey stars have presented a united front throughout their legal drama and trial, but it looks like the stress of it all is taking the ultimate toll on their marriage. As the two prepare themselves to head to jail, reports swirl that Teresa and Joe are also bracing themselves for a split, according to Radar Online.

Though fraud charges and threats of deportation would affect any union, sources say that it's actually Joe's blatant alcohol abuse in front of their young daughters that is making married life unbearable for Teresa.

"It's really sad. Most nights Joe stays downstairs long after Teresa and the girls have gone to bed. He usually drinks a lot of wine and ends up passing out on the couch," an inside source tells Radar Online. "When it first started happening, Teresa told him to at least make an effort to come upstairs before the girls get up in the morning. She didn't want the girls to see their dad on the couch first thing." As fans of the show know, Teresa is fiercely protective of her daughters and the source says, "If they didn't have kids, Teresa would never have said anything."

The source also says that Joe, who was sentenced to 41 months in prison for federal bank fraud charges, is not willing to honor his wife's requests and doesn't even sleep in the same room with Teresa anymore. "In recent months, he doesn't even care what Teresa wants," Radar's insider claims. "He is beyond pretending that everything is fine behind closed doors. His feeling is, it's his house for the time being and will sleep wherever he wants... the fact Joe chooses not to share a bed with Teresa speaks volumes about the state of their marriage."

And as Teresa waits to serve her 15 months of hard time, the source knows one thing: The couple's wedded bliss will not outlive Joe's time in prison. The insider claims Teresa "will absolutely file for divorce from Joe once she is done serving her prison sentence."

During a visit to Conan Monday night, Dax revealed the weird and gross way he prepped for his role in his upcoming movie, This Is Where I Leave You, which includes a scene in which the actor has to bare it all. And, it turns out, getting his backside ready to be front and center required a little, er, grooming — and Dax enlisted his wife to do the honors.

In the super cringeworthy video of the interview, Dax goes into all the hairy details about the landscape down there, and let's just say we'll never look at hills and valleys quite the same way.

"While I don't have a lot of hair on the cheeks — they're nice — you know, there's an ample amount... there's a forest in the valley," Shepard said. "And my fear — my deep, deep fear — would [be to] look like there's a werewolf trying to escape my butt crack."

Don't worry. It gets weirder.

After talking about the regimen he used to cure himself of "tall white guy syndrome, where your back just goes into your legs" (squats and lunges) and, of course, Kristen's tool of choice (an electric razor, "that you would trim your dog with," according to Dax), the actor dished on what exactly went down while Kristen was clipping away.

"I don't know why — I think she had some nervous energy going," Dax said, "But while she was trimming it, she was humming..."

The Voice has always had one female coach to three male coaches, but the recent news that Stefani is out and Aguilera is back in after a two-season break has us wondering: What gives?

Especially considering that PharrellWilliams will be returning along with Levine and Shelton.

Now, it's entirely possible that Stefani has decided to leave the show of her own accord, but without a comment from her or the show's producers as of now, we're only left to wonder. And that wondering has led us to a bigger thought: It's time for the women to at least be represented equally as judges on the show. Why is it that when it came down to filling the 2015 judges roster it had to be either Aguilera or Stefani? Why couldn't the other three be considered on the chopping block, as well?

Hmm... did The Voice make the right decision by hiring Taylor Swift?

Sure, so far, Season 7 hasn't been all smooth sailing for Stefani. She did, in fact, admit to forgetting Shelton's name at one point. But we had the opportunity to interview Stefani with the other three judges before the Season 7 premiere and she really sold us with her outlook on the competition and the way she could hack it with the boys while still portraying herself in a feminine and classy way.

On the flip side, the seasons with Christina Aguilera as a judge were also amazing. The girl has some serious pipes and definitely brought some solid experience to her team.

Uma Thurman, Arpad Busson split again, end engagement

Arpad Busson, a French financier who was engaged to Thurman until they called it off last April, filed a suit in Manhattan for full custody of their 2-year-old daughter, Rosalind. Though Thurman has two other children from a previous marriage, Rosalind is her only child with Busson.

Thurman, known for her role in Pulp Fiction, started dating Busson in 2007, two years after divorcing actor, Ethan Hawke. Hawke has since remarried and has two children of his own. Thurman and Busson broke up and got back together once before ending their engagement.

Busson, whose business is based in London, filed the papers with the New York Supreme Court, according to the New York Daily News. Few details about the case have been revealed so far — E! News reports that Busson filed an emergency order and that his attorney declined to comment on the case.

Custody battles typically go to matrimonial court and records for those cases are generally sealed, keeping the general public — and the media — from learning any details while the cases are proceeding. The New York Daily News says Thurman's case has been assigned to Manhattan Supreme Court Justice Matthew Cooper, who works full-time on divorce, custody and child support cases.

Thurman has custody of her children from her previous marriage, 16-year-old Maya and 12-year-old Levon.

Rosalind, who is nicknamed Luna, was born in July 2012. Since Thurman and Busson split, Busson has started dating actress Kristin Scott Thomas, who starred in The English Patient.

October movie preview: SheKnows picks the flicks

In order to do that, he went to the guys who know best — those who were fighting on the frontlines during WWII and who, it turns out, had never heard of Brad Pitt before being asked to consult on the set of Fury.

George Smilanich, a decorated WWII vet, was one of the four that Pitt hired. As NBC News reports, Minnesota resident Smilanich doesn't watch a lot of movies — he's more of a football guy.

That's exactly what Smilanich did during the war, NBC reports — he served in Africa and Normandy Beach and helped liberate Holland as a tank driver for three years.

"It's tough to... I can't tell you how it was," Smilanich tells NBC's reporter, but during his time with the cast of Fury, he was asked to tell all.

"They asked what life was like on the tank, what we did for excitement, what we were eating," Smilanich says.

Smilanich, a Bronze Star recipient, once pulled his trapped commander from a burning tank. He also nearly had his feet amputated because of frostbite.

"I wouldn't give my experiences that I had for a million dollars," Smilanich says, "but I wouldn't take five cents to go through it again."

But now, with the war behind him, Smilanich and his wife are preparing to walk the red carped with Brad Pitt, whom they now know — personally.

Being a feminist is not making other women feel bad for their choices

Stewart admitted in an interview with the Daily Beast that she has never seen herself as the type of person to "stand up and effect change," but said she doesn't understand why so many women don't embrace feminism.

"In America, there are way more male filmmakers than female ones, and they want to tell more masculine stories. Most of our great films that we're proud of, you've got Bob De Niro, Jack Nicholson, and the bravado is overwhelming," Stewart explained. "And that's still going on. I read a million scripts and people say I choose my scripts carefully, but it's just so obvious when the role is different, and complex, and not some typical, archetypal girl, because they're so rare. Not to sound cliché, but it's a male-dominated and driven business."

Stewart isn't the first one — nor will she be the last — to stand up for women who are working to change things. Here are some other celebs who have spoken up recently.

George Clooney's love story gives hope to singles everywhere (VIDEO)

The news broke on Amal Clooney's work website. While it was previously reported that she was going as Amal Alamuddin Clooney, it appears she has at least dropped her maiden name for professional use.

Because of Clooney's return to work today, the newlywed is in the spotlight as she returns to Greece to work on a case in which she'll try to win back the Parthenon Marbles from the British Museum. And while her work is, of course, important, it seems her new name is the talk of the world.

Some are calling her decision to adopt the last name her conformance to a patriarchal society.

In an article on Legal Cheek, writer Natalia Naish said Clooney's decision to change her name "is doing the world a disservice by demonstrating that even very powerful and successful women are still less important than the men they marry — even when, as in the case of Amal, this is obviously not true."

Another article on The Hoopla suggests that Clooney has become the property of her husband by taking his last name. "Let me make this clear: as a human rights lawyer you are giving up a fundamental human right."

We, on the other hand, think you can still be a feminist and take your husband's last name. Just as The Hoopla article suggests, the idea of taking your husband's last name and becoming his property is absolutely archaic. Instead, for me, taking your husband's last name is a symbol of the teamwork and life growth you are both now committed to together. It is another element, like rings, that bonds two people together cohesively into a pact that signifies their mission to build a life with one another.

Societal traditions, no matter where they stem from, have established that the man's name is adopted at marriage. But that doesn't mean he is somehow one-upping his new bride. Because that isn't the point of marriage at all and to see that bond in that way is debasing something that should be seen as a beautiful tradition of two families becoming one.

Regardless of Clooney's motivations for taking her husband's last name — because they most likely aren't the same as mine — it doesn't matter. She is a strong, independent, intelligent human being who has the right to make her own decisions. And she has. And we should support her for it instead of trying to make her feel guilty. Those out there trying to make her feel less for her decision are only being hypocritical by cutting down a woman in the same way you claim to stand against.

Feminism isn't just about equality for women. It's about equality for all. In an equal society, people can make their own decisions without fear of retribution. Clooney's decisions within her marriage shouldn't even be an issue.

Two people fell in love and they are choosing to celebrate that love with one another as they see fit. We should embrace that instead of looking for error.

As most of us girls know, it's hard to balance the coveted big booty look without sacrificing skin quality (I'm talking about cellulite here), but Rose somehow has managed to have her cake and eat it, too. Her bum is large and in charge, while still perfectly smooth. Safe to say, we're jealous.

Her butt is so voluptuous, it gives Kim Kardashian a definite run for her money. The photo of Rose makes it resoundingly clear that Kardashian's current husband, Kanye West, has a type. Rose and West dated from 2008 to 2010 and Rose has accused West of cheating on her with Kardashian and went so far as to call the socialite a "homewrecker." Rose says that she caught Kardashian sending West racy pictures of herself, which is interesting, because the newly single Rose has reportedly been doing the same thing recently, according to OK! magazine. It's rumored that Kardashian has laid out an Amber Rose communication ban for her husband.

Judging by her caption, the picture is also a bit of social commentary on Rose's part. The caption reads, "#Thot #Whore #Ho #Slut #GoldDigger..... #ButDatAssonFleekDoe." It seems that Rose is trying to say that she's unapologetic for who she is, despite all of the negative things that have been said about her since she first came under the spotlight.

We stumbled upon these sketches of humanized Disney characters and they were so strange, we had to share. The first picture is supposed to be the human version of Mickey Mouse. Is it us, or does the sketch look more like Elijah Wood as Frodo Baggins from The Lord of the Rings?

We also think the sketch of Minnie Mouse looks an awful lot like Christina Ricci, with these big doe eyes, tiny nose and large forehead. The drawing of Goofy, however, seems pretty on the money with those big eyes and shaggy hair.

We think the sketches get really awkward, however, once we get to The Lion King characters. We all know and love the lion, Simba, but given that he's from Africa, shouldn't his human version appear to be African, as well?

The sketch of Simba is definitely not hakuna matata with us. He looks more like the wax figure of Brad Pitt at Madame Tussauds. Then there's the sketch of Nala. We guess we were picturing a lady who looked more likeLupita Nyong'o than Carey Mulligan.

Simba and Nala are then sketched running off together, with lion tails on their backside. If they're human versions of animals, do they really need tails? We're just getting more and more confused.

Then there's Scar. This villainous lion was voiced by British actor, Jeremy Irons, in the 1994 animated film, giving Scar a certain uppity vibe. This guy looks like he belongs in a dungeon on Game of Thrones.

The portrait of Timon, Pumbaa and Young Simba almost makes these characters look like maniacal killers, evoking the image of Heath Ledger as the Joker in The Dark Knight. We certainly don't want our kids spending any time with these wacked-out dudes. Yikes!
