Healthier no-bake Nutella bites

These decadent little bite-size treats save you from having to crank up the heat in the kitchen during the summer. Nutella is a super rich and creamy chocolate-hazelnut spread that works wonderfully in this dessert. Rather than using strictly oats as many recipes call for, I decided to add even more chocolate flavor by using crushed chocolate graham crackers, and I also sneaked in flaxseeds and raw honey. These are great for picnics, parties or just for curing a late-night sweet tooth.

No-bake nutella bites recipe

Healthier no-bake Nutella bites recipe

Yields 24

Ingredients:

  • 1/4 cup Nutella
  • 1/2 cup creamy peanut butter
  • 1/4 cup raw honey
  • 8 chocolate graham crackers
  • 1 cup old-fashioned rolled oats
  • 2 tablespoons ground flaxseeds
  • 1/4 teaspoon sea salt
  • Colored sprinkles for coating (optional)

Directions:

  1. Into a microwave-safe bowl, add the Nutella, peanut butter and raw honey. Heat on high for 30 seconds or until the mixture is warm and somewhat melted.
  2. Into a food processor, add the graham crackers, oats, flaxseeds and salt, and pulse on high until the mixture is very fine.
  3. Pour the warmed Nutella-peanut butter mixture into the food processor, and pulse until a ball forms.
  4. Using a cookie scoop, scoop out chunks of the dough ball, roll them into smaller balls, and place them onto a baking sheet lined with wax paper.
  5. Fill a small bowl with the colored sprinkles, and roll each ball into the sprinkles. Store the bites in an airtight container in the refrigerator for up to 5 days.

3 Ways to banish underearning in your freelance career

I work as a freelancer in a creative field. I really love what I do, but I am always struggling to pay my bills. I often go without or don't do things I’d like to do simply because I don't have the money. Sometimes, when I get really behind, I have to ask one of my siblings for help. Because I was the baby of the family, my brother and sisters still treat me like the little kid who is always screwing up. But I don't have any idea how I can better manage my money. I keep careful track of my spending and have cut back on everything I can. This causes me a lot of pain and shame, yet I am not sure what else I can do to economize more.

Being a freelancer is tough. Not only is it a lot of work to run your own business, but the ups and downs in income can wreak havoc with your cash flow. The lack of a clear structure can also make it hard to diagnose what needs to be fixed when things are not working.

In your letter you mention all of the things you’re doing to carefully manage your money: You track spending, make sacrifices, you go without. Still, it doesn’t seem to be enough and you keep finding yourself struggling to make ends meet.

This leads me to suspect that the problem isn't that you need to find more to cut. There are two sides to any equation, and the solution for this one is to increase what you bring in.

I realize this might sound simplistic to the point of being ridiculous. Still, I have worked with scores of freelancers and you'd be surprised how often this is missed.

We all have an internal frame for how we perceive situations where money is out of balance. Some people look at the facts and see too much spending, and others will look at the exact same conditions and see not enough income. Our perception is often a reflection of how we view our place in the world. If a financial problem triggers shame and self-worth issues, then we would rather make cuts, even painful cuts, than deal with the expected rejection of seeking out and asking for more.

It sounds to me like you've reached the limit to which you can shrink your life. So now your money is bringing you to an important lesson: How do you shake off the toxic legacy of the past, and learn to earn what you deserve?

1. Get out of your own head, put a plan on paper

The first thing you need is a structure for your work that buffers you from the distorting effects of emotions. A simple business plan is the tool for the job. You might think, "But I'm just a freelancer, not a business." Not true. Your freelance work is a business, and you need a clear statement of what it is you do, the market for your work, your income goals, and how you plan to spend the money you bring in. Without a plan, your decisions will always be overly swayed by how stressed or exhausted (or, just as dangerously, how optimistic or flush) you feel in the moment.

2. Use your plan as a guide to organize your efforts

Many freelancers I know, especially ones in creative fields, only want to focus on the work or service they provide. They figure if they offer a superior product then the rest will sort itself out. But with this narrow view, they may get lost in unnecessary details of production, or see their difficulties as a statement about the value of their work and slash their fees. When you have a working business plan, you have stable targets for what you're trying to earn and spend. You can always edit your plan, it's not written in stone... but in pushing yourself to stay plan-focused you give yourself an important reality check. You can easily tell if you're meeting your target revenue (Nope. Need to focus on generating more income. Should I raise fees? Start a new marketing initiative?) versus overspending (Aha. money is coming in as projected, but I blew my budget this month and need to adjust for the period ahead).

3. Get support

Even after you create your plan, it's perfectly normal to need help in those areas that pose a particular challenge. Change is hard, and we all require help to grow. The key is to connect with positive, constructive resources that will support and affirm your efforts, not tear you down and remind you of past mistakes.

Groups like Underearners Anonymous offer meetings for people trying to address chronic underearning patterns. You might look for a chapter in your area, or read books on the subject like those by noted underearning expert Barbara Stanny.

As I've said before in this column, I'm a firm believer that money troubles often appear in our lives as lessons that help us to grow. You may be the youngest in your family, but you're no longer a baby. Your money is telling you it's time to grow up and grow into your place in the world.

For kids with sensory disorders or who need occupational therapy, the advantages of playing with this animated substance goes way beyond fun. "It is just like playing with wet sand," explains Caitlin McLaughlin, occupational therapist for Connecticut Children's Medical Center. "You can form any kind of three-dimensional shapes and those shapes maintain their form. This can be extremely therapeutic for children with tactile sensitivities and helps them tolerate touching a grainy substance." But, immersing your hands into kinetic sand isn't the only way to play.

Sensory play ideas

For youngsters with tactile and noise sensitivities, playing with kinetic sand can help kids:

  • Relax and get used to it. Especially for children with tactile therapy needs, sifting the sand through fingers helps kids get familiar with the texture while also offering a relaxing activity.
  • Make 3-D shapes. Mold kinetic sand into a sphere, a brick or any other 3-D shape your child's hands can fathom.
  • Go on a treasure hunt. Bury small objects like army men, jewels, plastic coins and buttons and have your kids dig for "buried treasures" with their fingers.
  • Get all Zen-like. Using a stiff paintbrush, kids can stroke the kinetic sand for a calming activity similar to a Zen garden.
  • Design a pretty pattern. Using shells, nuts, cardboard tubes and more, your youngster can create patterns in the sand and fine-tune motor skills.
  • Play with your food. Kids can "bake" with kinetic sand by shaping it into ingredients and mixing it by hand in a bowl.

Occupational therapy options

Playing with kinetic sand can also help focus the fun on fine motor skills and hand strength when you:

  • Slice it into chunks. Let your kiddo use a plastic knife to cut the kinetic sand to increase hand strength and strengthen fine motor skills.
  • Make play cookies. Use cookie cutters or the opening side of a plastic cup and encourage your kid to cut the kinetic sand into 2-D shapes.
  • Create indoor sandcastles. Bring the fun of the beach indoors by letting kids pack and unmold sandcastle shapes.
  • Pay attention to the details. Spread it flat or shape into a sphere and use small tools to etch designs and faces into the sand.
  • Put pressure on it. The unique texture of this living moldable media makes it great for squeezing for hand strength.
  • Push small objects into the sand. Give your kiddo a handful of toothpicks or buttons and have your child push the objects into a mound of kinetic sand for occupational therapy play that you can time, too.

Gold medalist Ian Thorpe ends speculation, reveals he's gay

Despite denying his sexuality for years, the athlete ended all the chatter with one televised appearance on Australia's Channel 10. Speaking with British talk show host Michael Parkinson, Thorpe said, "I'm not straight and this is only something that very recently. We're talking in the past two weeks. I've been comfortable telling the closest people around me exactly that."

Thorpe, who retired his swimming gear just two years ago, said that the efforts to hide his sexuality were sort of like one big media snowball. During the interview, he explained that when his sexuality was questioned as a teen, he was too young to even know what straight or gay was. He would simply identify as a heterosexual male to avoid any taunting from his classmates — but the lie would go on for years to come. "I felt the lie had become so big that I didn't want people to question my integrity," he confessed.

Just like other gay athletes, Thorpe admits he wants to be a role model of sorts for the young teenagers, saying, "I'm comfortable saying I'm a gay man and I don't want young people to feel the same way that I did. You can grow up, you can be comfortable and you can be gay."

Thorpe's big-time revelation is a stark contrast from his statements just a few years ago. Back in 2012, his autobiography This Is Me explored his headline-making sexuality and clarified any murmuring word at the time. "For the record, I am not gay and all of my sexual experiences have been straight. I'm attracted to women, I love children and aspire to have a family one day," he wrote.

The new promo is quite exciting! The best part is, of course, the narration by a Dalek. Those terrifying trash cans may be some of our most hated foes, but we'll always get giddy at the thought of seeing the Doctor battle those laser-shooting plunger-faces. We also catch a few other interesting glimpses, including a T. rex wreaking havoc at the Parliament building and the return of Vastra and Victorian London. We also can't wait to see what lands a nightshirt-adorned Doctor atop a galloping horse.

The promo ends with a question from the Doctor that we're already familiar with: "Am I a good man?" It's a question Clara, still relatively new to the companion game, isn't quite sure how to answer — and as we're promised that we'll travel into darkness, we're beginning question his goodness ourselves. Finally.

The new teaser (which premiered during the World Cup final) comes on the heels of a scandalous week for the BBC. Unsourced images and video supposedly from the forthcoming Doctor Who series premiere recently began to filter through various outlets. Soon enough, those snippets were followed by word that the entire rough cut of the premiere was available on certain video pirating websites. The images were in black and white, a new title sequence had yet to be added and there were clearly some vacant spots for commercials or more scenes. However, it was as close to the real deal as fans have come in months, and many were eager to take a look at all the never-before-seen footage.

Whovians unwilling to risk their computer's safety, who were perhaps paranoid of the BBC's wrath and thus refused to believe the images were real or who would rather wait for the real thing were soon assured by the BBC. The network issued a statement regarding the footage and the ongoing investigation into who leaked the video. Looks like someone might have to spend some time in the Tower of London.

NBC's Peter Pan Live nabs Christopher Walken as Captain Hook

"I started my career in musicals," Walken said in a statement. "And it's wonderful after all this time, at this point in my career, to be in this classic musical I watched as a child and to work with Neil Meron and Craig Zadan again after Hairspray. It's a chance to put on my tap shoes again."

It's been a long time since Hairspray and Walken's days on the stage, but he seems to have NBC's full confidence. Before that, Walken showed off his fabulous dance moves (and flying skills) in Fatboy Slim's "Weapon of Choice" music video, from 2001.

As for the rest of the cast, the jury is still out. NBC's Entertainment Chairman Bob Greenblatt did confirm that the network will, indeed, carry on the tradition of having a woman play Peter Pan. He even stated that the network had originally courted Kristen Bell for the part, but scheduling conflicts took her out of the running.

"We were talking about doing it with a man at one point, but we've had several women who wanted to do it and they're either busy or their schedules don't work," Greenblatt shared. "It's not like we can film this at any time; I need this person from Aug. 5 to Dec. 5, so that knocks out the Kristen Bells of the world, who was somebody I talked to about doing it and she was interested but she's doing House of Lies. It's tricky finding the right person in the schedule that we need it, but we're actually close. [Peter is] going to be female."

As much as we'd love to see Bell fly around as Peter, we're sure that even without the House of Lies conflict, hubby Dax Shepard would have major issues with his lovely lady flying around on thin cords while carrying their second child. Plus, there are plenty of nearly-as-talented and lithe blondes who would be an acceptable choice in the role. And as long as we get Mae Whitman as Tink, we really don't care what else happens.

I'm always willing to give a new product a shot, so when Carol's Daughter Cupuaçu Anti-Frizz Smoothing Trio came across my desk, I decided it was worth a try. Could the product cocktail be the secret to beating frizz, I wondered? I wasn't sure, but I was willing to find out.

With summer in full swing and my naturally curly/wavy hair feeling the frizz factor, I set out to test all three products in the line to see if they'd be my miracle frizz cure. I started out using the Cupuaçu Anti-Frizz Smoothing Shampoo and Conditioner to see how the duo would treat my locks.

After showering, I skipped my usual leave-in products to see if this duo would truly stand up well against the frizzy beast, and I was pleasantly surprised to see that the shampoo and conditioner's effects lasted long after my shower. My waves were defined, shiny and smooth to the touch, and my hair was quite contained instead of the frizzy mess it can sometimes be on super humid days. These effects lasted for a few days, and I decided it was now time to give the Cupuaçu Anti-Frizz Smoothing Hair Mask a whirl.

As a beauty editor, I'm no stranger to hair masks, and love to do one at least once a week. But I'm also quite skeptical of them because not all masks do what they claim to do. Lucky for me, this mask did just what it said it would. Similar to the conditioner, the Anti-Frizz Smoothing Mask made my hair shiny and soft to the touch and it was quite easy to use and rinse off. Also like the other products in the line, the mask smelled pleasant and subtle.

As a curly gal, I know very well that one product line doesn't fit all curl types, but I do believe that finding your perfect product cocktail, aka a collection of products you use together, can help train your hair to fight frizz. Two other ways I like to beat frizz in the summer months? Air drying and drying with a paper towel. When it's hot and humid out, heat treating your hair can just beg for frizz, so I prefer to let my locks dry naturally. To help them along a bit, I like to pat my hair with a paper towel rather than a terry cloth towel, because rubbing it too harshly with a towel can cause extra frizz and what gal wants that?

Brandon Mills, a group cycling instructor at one of Los Angeles' premier cycling studios, Cycle House, stresses the importance of stretching out, especially post-class, "Be honest with yourself — you just dedicated 45 to 50 minutes to strenuous physical activity — you have five minutes to stretch. Focus on both static and dynamic stretches from head to toe, making sure to spend time on your hamstrings, quads and glutes."

The exercise focuses on limbering up the hamstrings, glutes and lower back, but also targets your upper body. Just make sure you perform the exercise with complete control, only kicking and reaching as high and as far as your range of motion allows.

Stand with your feet hip-distance apart, your knees slightly bent, your arms at your sides. In one motion, kick one of your legs in front of your body, keeping your knee relatively straight, as you reach your opposite arm across your body, as if you were going to tap your toes with your hand. Return your leg to the ground and your arm to your side, repeating with the opposite arm and leg. Continue alternating between legs until you've performed the exercise 10 times on each side.

The external hip rotation helps loosen up your abductors (outer thigh) and your glutes. Stand with your feet hip-distance apart, your hands on your hips.

Draw your right knee up in front of you to hip-height. With your knee bent, abduct your hip outward as far as you can, so your knee and thigh are pointing to the right. Return your foot to the ground in the starting position and repeat with the opposite leg. Perform the exercise 10 times to each side.

Start by kneeling on the ground, your torso straight and tall. Step your right foot forward and plant it on the ground a few feet in front of your left knee — as if you were proposing to someone.

Push your hips forward, extending through your left hip as you reach your arms up and over your head, looking toward the sky. If you can, lean back as you stretch upward to open up the chest and shoulders and stretch the core. Reverse the movement, stepping your right leg back so you're kneeling on both legs again. Repeat on the opposite side. Perform the exercise five times to each side.

The Downward Dog to glute stretch is a great, full-body stretch that targets everything from your shoulders to your hamstrings to your glutes.

Start in a plank position, your arms fully extended under your shoulders, your legs fully extended behind you. Press your hips up and backward as you extend your shoulders, your body forming an inverted "V." Push through your heels, trying to drop them to the ground as you let your head hang between your shoulders. In one motion, push back into a plank position as you draw your right knee forward toward your right hand, rotating your knee outward so your foot crosses in front of your body. Place your right shin on the ground and press your hips forward to feel a stretch through the outside of your right thigh and into your glute. Hold for a second, then lift your right leg off the floor and return to plank. Repeat on the opposite side, alternating between sides until you've performed three full cycles with each leg.

Finish up your stretching routine with a final, static glute stretch. Mills suggests doing this stretch while standing next to your bike so that you can hold onto the saddle for balance, if needed.

Stand tall, with your feet shoulder-width apart. Cross your right ankle over your left knee as you rotate your right hip outward, creating a "4" with your legs. Shoot your hips back as you lower your glutes toward the floor, trying to get them parallel to the ground. Press against your right knee with your hand or elbow to deepen the stretch through your butt. Hold for 20 seconds and repeat on the opposite side. Perform the stretch two or three times.

It was just announced that he will make his first appearance at San Diego's Comic-Con on July 24. How do I feel about knowing Benedict Cumberbatch will be in my time zone? I'm falling out of my chair.

Before you even ask, I will not be attending for fear of excited implosion. My husband (yes, I have a very hot husband, thank you) says if I ever met Benedict, I wouldn't be able to talk. I would just stutter vowels. He's probably right. That said, my problem is all my husband's fault.

He was the one who made me sit down and watch some BBC show called Sherlock, and Sherlock is where this whole obsession began. How could it not? In 2010, Benedict Cumberbatch was a little-known but well-respected indie actor. For Sherlock, stylists had him grow his curly hair long and dye it black, which made his bright blue eyes even brighter.

The stylists dressed him in Spencer Hart suits, Dolce & Gabbana shirts (the now-famous "Purple Shirt of Sex") and a killer coat. Since Benedict is slim, the costume designer had things tailored super slim — which had the effect of showing off how nice that "slim" body is. Talk about a silhouette! And the voice. The voice! The kind of voice that gives goosebumps.

By the time the first episode was over, I was online, looking up Ben... Ben... what was his name again? I had to search the show to find the immensity of "Benedict Timothy Carlton Cumberbatch." It was then I realized I was late to the party. Britain had known about this guy for ages, and there were already two completed seasons of Sherlock released and ready to watch.

Then, came Star Trek: Into Darkness, where he played epic villain (spoiler) Khan. For the role, Benedict ate 4,000 calories a day and bulked up four suit sizes. Yeah, we noticed. I showed up opening night in a T-shirt with his face on it. My problem is very serious.

OK, OK, so he's hot and he's a dang good villain, but let's be honest: he's a total goofball. He photobombed U2 at the Oscars. He loves to dance. (We of the Cumber Collective have extensive visual evidence.) When asked about his allure, he says, "I enjoy being considered handsome, even though I think it's hysterical."

He is hysterical. He's funny and kind and acts like a little kid... when he's not wearing Spencer Hart on the runway. Maybe this is part of my obsession: Benedict Cumberbatch just seems so dang happy! He's never the grumpy celeb signing autographs with a frown. He's not out getting drunk and drag racing. When asked what he wants more time for, he says, "Reading books." Arrrrrgh, I just melted into a puddle...

What's funny is he says he's had trouble meeting women recently because they all think they're meeting Sherlock (who would make a terrible boyfriend) when they're really meeting Just Ben. Thankfully, there are rumors as of late that he does have a special lady. Thank goodness, because the man really wants to be a father. Shoot, I just melted into another puddle...

In days, Benedict will celebrate his 38th birthday, and Cumberbabes the world over have started charity funds dedicated to July 19. He was just nominated for a primetime Emmy for his portrayal of Sherlock in Season 3 and his feature film, Imitation Game, will be released November 21. (There’s already Oscar buzz.) Plus, they just announced Sherlock will be back for four more episodes next time around. Another big year for a talented man who deserves to do well.

Maybe I do have a massive board on Pinterest dedicated to the guy. Maybe my friends call me their "Purveyor of Words, Wisdom and Benedict Cumberbatch." Maybe the room gets a little warm when I hear his deep British voice. But hey, if you're going to be obsessed with a celebrity, might as well be a nice guy, right? A nice guy with gorgeous cheekbones and a great butt.

REVIEW: Yes! Jason Mraz managed to make another album just like the rest

That time Jason Mraz went to Myanmar >>

To be fair, Mraz knows exactly what he's doing and he does it well. So, why mess up a good thing? And there is a distinctly different quality to the album, as the entirely acoustic recording lends itself to being somehow more Mraz than he's been in a while.

Tracks like Mraz's first single, "Love Someone," contain just the Mraziness of which we speak. With mellow guitars and, dare we say, sitars, "Love Someone" feels like one of the most easygoing songs we've heard from Mraz in ages. If he didn't write this after one seriously intense yoga session, we'd be surprised. It's so pretty, we don't even mind the cliché big chorals in the background. We can even forgive the line "shiny stars all seem to congregate around your face." (It does sound a little like someone gave a teenage boy a thesaurus, though, right?) And, while it's clearly a love song for someone in particular, we appreciate the karmic idea that when you love someone, you get love in return.

Another wholly familiar love song from Yes! is the track "Hello, You Beautiful Thing." It's a little sexy... in that we'd love to roll over in bed and find Mraz yawning those words to us. But it's also a song that could easily fit on any of his previous albums and was certainly made with the radio in mind. He falls on his classic not-quite-rapping way of talking through the verses, but if you didn't already love that aspect of his brand, you wouldn't be here. Right?

Maybe we're partial to driving songs (who isn't?), but our favorite track is "Long Drive." Destined to be rerecorded by some pop-country artist, "Long Drive" is one of those songs where each person who hears it will make up their own memory or daydream-filled music video. The basic concept: Finding yourself in a car with the one you love and hoping the journey never ends. "Long drive, long night, the best night of my life," Mraz croons. And everyone knows exactly what he means.

The rest of Yes! is awash with the usual Mraz kitsch and cliché. It's not offensive. There's plenty of ukelele. Plenty of opportunity to swish your hips. Plenty of love for hot girls and the world at large. And plenty of Mraz reminding fans he's just a normal, nature-lovin' dude. We like it well enough, and we know Mraz fans will love the album as well. However, if you're someone who wants signs of growth from an artist who has been around as long as Mraz, you should probably look elsewhere.

The pros and cons to drinking raw milk

Despite the challenge of getting raw milk (the sale of raw milk varies from state to state — often restricted to on-site sales at the farm or is altogether prohibited in some states), the raw milk movement is growing — and it includes mothers who are convinced of its health benefits for their children.

Raw milk, however, remains a controversial subject: both the Food and Drug Administration and Centers for Disease Control and Prevention claim that raw milk is "dangerous."

A mom without qualms

Despite the FDA and CDC warnings, Jane Bies — a former cardiac nurse and an Omaha, Nebraska-based certified holistic health coach — decided that raw milk had a place in her family's diet. Three years ago, she introduced raw milk to her husband and four children, ages 12, 10, 8 and 6 at the time.

Bies, who had grown up drinking only pasteurized milk, admits: "The thought of drinking raw milk used to scare me — that is, until I did my own research."

When a friend mentioned that he bought raw milk for his family from a small, local organic dairy farm, where the cows were 100 percent grass-fed, Bies was persuaded to give raw milk a real try. She called the farm first, and — after asking many questions based on her research — she bought her first gallon of raw milk. She loved it. So did her husband and kids. "We're a family of six, and we go through a half gallon of raw milk a day," she says.

The flavor and texture of raw milk, she says, is incomparable: "It's always creamy; sometimes, in the summer, it can have a grassy tang and, in the winter, it's extra creamy because the cows get some organic oats."

The raw and the cooked

It is important to understand the difference between raw milk, pasteurized milk, ultra-pasteurized milk and homogenized versus non-homogenized milk.

Raw milk comes from pastured cows (cows grazing on green grass most of the year) and retains all of its fat. Raw milk has not been processed in any way, and it is non-homogenized (i.e., left standing, a "cream top" will form). It is considered a "live" food.

Pasteurized milk is heated to 170 degrees for 19 seconds to kill potentially harmful pathogens. Most milk, including organic milk, sold in commercial grocery stores and supermarkets is pasteurized.

Ultra-high temperature (U.H.T.) pasteurized milk, also known as "ultra-pasteurized" milk, is heated to 280 degrees for approximately two seconds (using superheated metal plates and steam), and then chilled. This process produces milk that has been completely sterilized, enabling it to have a longer shelf life (e.g., boxed milk shelved at room temperature).

The idea behind pasteurized and ultra-pasteurized milk is to destroy any potentially harmful pathogens in milk; however, many of the beneficial bacteria and enzymes present in raw milk are also destroyed.

Non-homogenized milk refers to milk with an uneven consistency — the fat has naturally separated from the "body" of the milk, forming a layer of cream that collects at the top.

Homogenized milk, on the other hand, has a rich, white color and smooth texture — the end result of an emulsification process called homogenization. At the turn of the 20th century, Frenchman and inventor Auguste Gaulin introduced a homogenizing machine, which could break up milk’s large fat globules into smaller, uniformed sizes that resisted separation and rising (i.e., no cream top). The modern homogenization process involves pushing milk through a fine filter at very high pressure, reducing the size of the fat globules so significantly that they are evenly dispersed throughout the milk. Homogenization usually follows pasteurization.

Purported risks

The CDC and FDA are adamant about the dangers of drinking raw milk. The CDC reports that unpasteurized milk is 150 times more likely to cause foodborne illness, and results in 13 times more hospitalizations than illnesses involving pasteurized dairy products. Dangerous bacteria, such as Salmonella, E. coli and Listeria can lurk in raw milk.

Drinking contaminated raw milk does have serious health consequences. Potentially harmful bacteria in raw milk can be especially detrimental to people with weakened immune systems, pregnant women, young children and the elderly.

Chris Kresser — a licensed acupuncturist, functional medicine practitioner and a health and wellness blogger — frames the risk of drinking raw milk in a larger context, of relative incidence of foodborne illness.

For example, compare the risk of becoming ill from drinking raw milk (one in 94,000) to shellfish and oysters, where:

  • You have a one in 66,000 chance of becoming ill from eating shellfish.
  • You have a one in 88,000 chance of actually dying from eating raw oysters.

Benefits of raw milk

In comparison to pasteurized homogenized milk, raw milk is frequently praised for having a superior flavor and texture. Anecdotal accounts and personal testimonials also suggest that those who are lactose intolerant have no problem digesting raw milk.

Devotees are convinced that raw milk is a whole food that is nutritionally superior to conventional milk. Studies suggest that they may have a point.

  • More C.L.A. Cows that eat mostly grass (some may receive supplemental grains in the winter) produce higher levels of conjugated linoleic acid (C.L.A.) and fatty acids in their milk. Research findings suggest that the benefits of C.L.A. — a naturally occurring "good" trans-fatty acid — may include: weight loss (and a decrease in abdominal fat); an improved immune system (especially for asthma sufferers); the ability to lower high cholesterol and high triglycerides; a reduction of cancerous tumors; decreased inflammation; and less insulin resistance. One study that analyzed C.L.A. content in cows fed different diets found that cows grazing on pasture — without any supplemental feed — had 500 percent more conjugated linoleic acid in their milk fat than cows fed typical dairy diets that included grain and corn.
  • Live enzymes. Considered a "live" food, raw milk contains many active, beneficial enzymes, including lactase, which helps break down lactose in milk, making it easier to digest. Lactase is not present in pasteurized milk, which is why some people can think that they're "lactose intolerant."
  • Beneficial bacteria. Raw milk is a rich source of beneficial bacteria. Eating foods, such as raw dairy products and lacto-fermented foods (like sauerkraut), can help optimize the levels of beneficial bacteria in your gut, important for a healthy immune system.
  • Vitamins. The butterfat in grass-fed raw milk is an excellent source of fat-soluble vitamins A, K2 and E and an unexpected source of vitamin C. According to the CDC’s FAQ sheet, the heating process of pasteurization not only deactivates some enzymes in raw milk, it also decreases vitamin C levels.
  • Improved immune health. Those who drink raw milk often cite improved immune health and reduced allergies. A cross-sectional study of nearly 15,000 children between the ages of 5 and 13 in five European countries suggests that consuming raw "farm milk" during childhood may offer protection against asthma and allergies.

Bies shares how her family has benefited from drinking raw milk: "We don’t get as sick in the winter — less colds and flu. My daughter's seasonal allergies have improved. Raw milk has also helped stabilize my kids' blood sugar — and their moods. They have fewer meltdowns!!"

How to buy raw milk safely

Reality TV influences happy relationships, sitcoms poison them

She said she packed up all of her DVDs and would be avoiding most sitcoms and dramas, too. According to her, she felt like these shows and their depicted relationships were messing with her head and her expectations for dating and love.

I remember thinking, "That's probably really smart," before returning home and turning on Grey's Anatomy.

It makes sense that what we watch on television has off-screen implications, but how serious are they and what should this mean about our habits?

My friend may have been wrong, or half-wrong, at least according to a new study by the Psychology of Popular Media Culture. Their study boiled down to this: You're better off watching romantic comedies and reality TV shows like The Bachelor than you are romance-heavy sitcoms.

The University of Michigan researchers discovered that people who watched rom-coms and romantic reality shows believed strongly in the idea of romance, while people who watched sitcoms almost experienced the opposite. "The more sitcoms participants watched, the weaker their belief in romance tended to be, including the idea of soul mates, love at first sight or the idea of a 'perfect' true love."

Gasp.

Furthermore, according to New York Magazine (who published the study,) believing in romance has real-world implications as well, including happier love lives and being more content with your partner.

Part of the reason can be boiled down to formatting, meaning that in romantic comedies you usually see a happy ending after only 90 minutes of turmoil. Conversely, studies from 2012 and 2006 offered the idea that reality TV romance impacts real-life relationships and marriage negatively. Meaning that those who perceive television romance as reality are more likely to have misconceptions and unhealthy expectations of their in-real-life relationships.

This is surely what my rom-com-cleansing friend was afraid of, and what actually makes more sense to me. But hey, science is science and if researchers are telling me that my Monday night fix of The Bachelorette will indeed help my love life in the long haul, by golly I will pour myself a glass of wine and oblige.

Cool craft: Transform paper plates into colorful fans

With just a few supplies, kids can turn paper plates into fun fans at your family summer barbecue. The watermelon slice fan is a fun painting project, the ladybug fan is easy painting and involves lots of paper cutting and the baseball fan is the simplest fan for kids who don't have the patience for a more involved craft.

Supplies:

  • 3 white paper plates
  • Poster paint in red, black and green
  • Paintbrush
  • 1 sheet black construction paper
  • 1 sheet plain white paper
  • 3 jumbo ice pop sticks

Directions:

Step 1: Paint the watermelon red

For the watermelon fan, cut a paper plate in half. Paint the inner circle of one half with red poster paint and let dry.

Use the tip of the paintbrush handle to paint black dots on the red part of the plate.

Paint the outer rim and 1 side of an ice pop stick with green paint.

For the ladybug fan, paint a paper plate and 1 side of an ice pop stick with red poster paint. Let the plate and ice pop stick dry.

Cut 4 large circles, 1 oval, 1 triangle with a rounded edge and 2 very small circles out of black construction paper and then cut 2 large circles out of white paper. Use a glue stick to attach the circles to the red plate.

For the baseball fan, use the tip of the paintbrush handle to paint red dots on a plate in the curved lines of a baseball seam.

Use craft glue to attach the green ice pop stick to the watermelon, the red ice pop stick to the ladybug and the plain ice pop stick to the baseball.

I love Southwestern flavors. The spices, the fresh and vibrant vegetables and the herbs are all perfect in my book. I've made several Southwest salads and pasta dishes, but never a pita filled with Southwestern foods and flavors until now.

Southwestern pita pockets

To get the Southwestern flavors, I used a salad dressing I created and love. You will toss the lettuce and vegetables in the dressing. The chicken gets cooked in a skillet and mixed in with everything else. And then you just stuff the mixture into warmed-up pitas. It doesn't get much easier than this meal. It is the perfect lunch for a busy day or a fun meal to bring on a picnic.

Southwestern chicken pita pockets recipe

These pita pockets are easy to make, completely portable and bursting with fresh flavors. Change up that typical sandwich or salad, and replace it with one of these. You won't be disappointed.

Serves 4

Ingredients:

For the filling

  • 1 large boneless, skinless chicken breast
  • Salt and pepper
  • 1 teaspoon Mrs. Dash Chicken Grilling Blends
  • 2-3 teaspoons olive oil
  • 4 pita pockets
  • 2 cups romaine lettuce
  • 3/4 cup assorted sweet bell peppers
  • 1 cup black beans
  • 1 cup corn
  • Fresh cilantro (optional)

For the dressing

  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • 5 tablespoons freshly squeezed lime juice
  • 1 teaspoon white sugar
  • 1/4 teaspoon garlic powder
  • 1-1/2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt

Directions:

  1. Sprinkle both sides of the chicken breast with salt and pepper (to desired preference) and then with Mrs. Dash Chicken Grilling Blends.
  2. Lightly coat your skillet with 2 to 3 teaspoons of olive oil.
  3. Preheat the skillet over medium-high heat until hot. Place the chicken into the skillet, reduce the heat to medium, and cook until the meat is no longer pink and the juices run clear, about 8 to 12 minutes.
  4. As the chicken cooks, turn it over occasionally so it browns evenly. If it starts to brown too quickly, then reduce the heat to medium-low.
  5. Remove the chicken, and chop it into large pieces.
  6. Prepare the dressing by combining all the ingredients in a resealable jar and shaking it until they are completely combined.
  7. Slice the bell peppers, making sure to remove the stems and seeds.
  8. Mix the lettuce, bell peppers, corn and black beans with the dressing.
  9. Stir in the chicken.
  10. Fill up the pita pockets with the chicken filling, and top with some torn cilantro, if using.
